I have lost my csiro recipe book and need to make the parsley relish for tonight. Can anyone help please?
1 bunch of italian flat parsley
6 anchovy fillets
2 T baby capers
grated zest of 2 lemons
1/2 C lemon juice
1/4 C Olive Oil
freshly ground black pepper
Place all ingredients except oil and pepper in food processor. Lightly process then with the motor still running add enough oil to form a thick paste. Season to taste with pepper. Serve with cooks lamb/beef with a dollop of relish ontop.
