Hope I am not too late you are offline

    Serves 4

    4 eggs
    1/4 cup crem
    2/3 cup cheese (parmesan)
    1/3 cup chives
    2 x 375g Fettuccine pkts
    20g butter
    250g bacon chopped
    2 teaspoons of garlic

Whisk eggs, cream and cheese together and season well with pepper. Add chives. Set Aside.
    Cook pasta til tender.
Cook bacon, with butter until crispy add garlic, and cook for another minute.
Drain pasta well. Pour egg and bacon mixtures together, mix well.
Personally I like to cook it a little here. Just 2-5 minutes, to ensure "eggy" flavour is gone.
    Serve with extra cheese.

    Hope that helps.

I never use the whites of the eggs, just the yolks, far better/richer flavour.
I cook the bacon, drain excess fat, add cream, paprika, parmesan and put on very low heat (don't want cream to seperate).
Then after the pasta has been cooked/drained I add the cream/bacon mixture over a very low heat, then add the egg yolks & stir - the heat from the pasta will cook the yolks.

Way too late - but Ill add my recipe anyways

5 rashers of bacon - roughly chopped
    3 large shallots - chopped
Half a bag (the paper ones) of mushrooms - chopped
    500ml cream
    2 eggs - whisked
half a cup of grated parmesan
    3 cloves of garlic
    salt and pepper

I fry the bacon, shallots, mushrooms and garlic in some butter until tender.
    Season with salt and pepper.
Pour in the cream and parmesan and bring to a simmer.. add the whisked eggs and stir with a fork until slightly thickened.

    Pour over cooked pasta.

Mine's way late too, but someone might want to use it some time!

    Fettucine Carbonara

    Ingredients:

    ~500g bacon
    ~500g chicken breast (optional)
    ~handful fresh mushrooms
    ~1 packet fettucine
    ~2 eggs
    ~600mls thickened cream
    ~Salt/pepper, to taste
    ~Shallots, to garnish
    ~Fresh parmesan cheese, to garnish

    Method:

Bring large pot of water to boil. While waiting, slice bacon, chicken and mushrooms.Break fettucine in half and place in boiling water – cook for 15 mins or until tender.

In a large wok/frying pan, cook chicken and bacon, then add in mushrooms.

In a bowl, mix eggs through the cream. Pour the mixture over the chicken, bacon and mushrooms, and stir through over low heat. Continue to stir until sauce thickens.

Drain pasta and toss with meat and sauce. Garnish with chopped shallots and finely grated parmesan.

Note: This recipe makes ALOT, so could halve if wanted.
