    Default Chicken pie?

    Does anyone have a good chicken pie recipe? I don't have my recipe books where I am living at the moment and really feel like chicken pie for dinner.

    Can anyone help please?

    I'm making this one tonight.

    Mustard Chicken Pie

    500g Chicken Breasts, chopped into bite sized pieces
    1 clove garlic, crushed
    3 spring onions, chopped
    1 carrot, chopped
    1 tablespoon chopped fresh thyme
    1 tablespoon seeded mustard
    1/2 cup sour cream
    1 cup frozen peas
    1 tablespoon cornflour mixed with 2 tablespoons water
    2 teaspoons butter

    Melt butter in a large saucepan, add garlic and stir for one minute. Add Spring onions, carrot, mustard and thyme and cook, stirring for two minutes. Add chicken and cook, stirring until chicken is cooked through. Add peas and sour cream then blended cornflour and water, bring to the boil and stir. Mixture should thicken slightly. Set aside to cool slightly.

    Pastry

    1 1/2 cups plain flour
    60g butter
    1/2 cup sour cream

    Rub butter into flour, add sour cream and mix to form a dough. Put in fridge for half an hour (I make the pasrty before the filling and make the filling while the pastry is in the fridge).

    Put filling in a pie dish, top with pastry, brush pastry with an egg and cook in moderate oven for about 15-20 mins, until pastry is golden.

    It is really yummy, but very addictive!!

    I have one

    it is pretty simple...a quick and easy one...

    can of mixed veges
    can of chicken soup
    cornflour
    chicken breast
    curry powder


    Dice chicken breast into small pieces and cook then heat the can of chicken soup in the microwave with a little cornflour mixed through to thicken. then add the mixed vegetables, cooked chicken and a little curry powder (you can leave this out)....trust me these are soooo yummy....it may not sound like it but they are delicious!

    Also we use a pie maker, so make little pies and use puff pastry circles....not sure how you would do one large family pie in regards to the pastry....

    Thanks, they both sound yummy...might have to get dressed and go for a walk to the shops tho coz I don't have all the ingredients for either of those.

    jack_0306, thanks for reminding me about the pie maker too I don't have my recipe books, but for some reason I do have my pie maker

    This one is really yummy and is in the July Super Food Ideas, we had it on Friday night, the kids love it...

    Chicken,Leek & Potato Pie

    2 tbs olive oil
    2 leeks trimmed,halved,sliced & washed
    400g coliban potatoes peeled & diced into 1cm cubes
    1/4 cup plain flour
    1 1/2 cups chicken stock
    1 small bbq chicken (skin & bones removed) meat shredded (you need about 2 cups of chicken)
    1 cup grated tasty cheese
    1 sheet frozen ready rolled puff pastry.

    Preheat oven to 220degrees, Heat oil in large saucepan over medium heat. Add leek and potatoes. Cook stirring for about 5 minutes or until leeks are tender.

    Spinkle over the flour. Cook stirring for 1 minute. Remove from heat and add stock stirring. Return to heat and let mixture boil for a few minutes or until potatoes become softer. Add chicken and cheese.

    Spoon mixture inot pie dish, place pastry over filling. Press edges to seal. Cut a small cross in the centre, pop in oven for 15-20 minutes or until pastry is golden.

    My Dad has always made this really simple one...

    2 sheets of puff pastry

    1 x pack continental cheese sauce
    2 x pack continental white sauce
    diced onion, carrot and celery cooked in water on stove till almost soft
    cold roast chook (chicken all pulled off and diced)

    Mix all sauce packs together and make up, add rest of ingredients. Line pie dish with one sheet of pastry, fill with chicken mixture and place other sheet of puff pastry on top.
    brush with milk and cook at 180 till risen brown and flaky.

    Still my fave chicken pie ever, we have it a lot with mash potato and beans. You can also replace celery carrot and onion with mixed frozen vegies or add corn kernals.

    Thanks for those recipes

    I didn't make it to the shops so made the most basic pie I could think of...DD hanging off my legs wasn't inspiring me to do anything fancy anyway.
    We ended up with chicken, onion, mushrooms, peas & carrot. I made a basic white sauce then put a little mustard in it. Even the kids liked them
