Low Fat Chicken Tikka Masala
To me a curry is the ultimate comfort food and my favourite choice is a Chicken Tikka Masala, but if you order one from your local take away, chances are that it will packed with oil, cream and won't do your waist lines and health any favours at all!
But as we love the taste so much we wanted to create a healthier version, without the excess calories and fat so it could still be enjoyed if you were watching your weight. And this recipe is now a firm fixture on my family's menu. Give it a shot this week and see what you think too
Low Fat Chicken Tikka Masala
Ingredients:
- 2 skinless chicken breast
- 150g 0% fat Greek yoghurt
- ½ a tin of chopped tomatoes
- 200ml light or low fat coconut milk
- 2 heaped tbsp of tikka masala paste
- 1 large red onion
- Handful fresh coriander
- Salt to taste
- Light oil spray
Instructions
Recipe serves two & contains 375 calories per serving. Add a 50g portion of cooked brown rice for an extra 150 calories per serving
- Cut the chicken breasts into small squares and put into a bowl with the yoghurt and half of the curry paste. Season with salt, mix well and cover before placing into the fridge overnight.
- To cook the chicken, take out of the marinade and place onto an oven tray and cook in a 220C oven for ten minutes. Meanwhile, slice the red onion.
- Next, heat the oil spray in a large pan and add the other half of the curry paste. Cook for approx two minutes then add the onion and turn the heat down low. Cook slowly for 8-10 minutes until sweet and browned.
- Stir in the tomatoes and the coconut milk and bring to a simmer. Add the cooked chicken and then lightly cook for another 5 minutes until cooked through.
- Finely chop the coriander and stir into the curry before serving.
