Chocolatey awesomeness for the cooler weather
Okay, I have been a bit slack with this blog but I have just moved house so I will use that as my excuse
Today we will be having Self-Saucing Chocolate Pudding - made all the easier because it's done in the microwave!
Ingredients:
50g butter
1 cup self raising flour
1/2 cup plain flour
1/4 cup cocoa
1 cup caster sugar
2/3 cup milk
1 teaspoon vanilla essence
3/4 cup brown sugar
Extra 1/3 cup cocoa
1 3/4 cup boiling water
Firstly you want a microwaveable bowl. Yes this is a one bowl wonder!
Melt the butter and add the flours, cocoa, caster sugar, milk and essence and mix well.
I like to smooth the top out a little so that the next part is more even.
Sprinkle the extra cocoa and brown sugar on top of mixture. Pour boiling water over this. If you like lots of chocolate sauce, add a little bit more water. Sometimes I find the sauce a little strong with 1/3 cup cocoa so i tend to do a little less, but just trial it as you may like it!
Here I like to cover the bowl with cling wrap, just helps keep the heat in. Put in microwave and cook for 15 minutes. When you take it out you should have one awesome gooey chocolate pudding.
Please be careful taking the cling wrap off as there will be a lot of steam! (Yes I have burnt myself before)
I like to serve this with a drizzle of cream or a scoop of ice cream (or both if you want to be really naughty). I find this is awesome if you have friends over and need a quick and easy dessert. It would make enough for about 6 people, depending on serving size
