View Full Version : chocolate alternatives, and healthy muffin/cupcake/slice recipes plzzzz

I've started a health kick in order to make this body of mine healthy to grow another baby in it, and banning chocolate is something I've had to give up (well eat lots less of anyway). I'd like some suggestions for when I have my sweet cravings that might be better for me. One of the healthiest chocolate bars I can eat is a turkish delight. I've also started having fruit tingles, but am stumped about what else I can have.

Also, my DD loves helping me bake so instead of never cooking another cupcake again I'm after some healthy cupcake, muffin, slice recipes that we can still eat together and will be much healthier for all of us instead of triple chocolate cupcakes :yes: . If you have any suggestions about chocolate replacements, or healthy cupcake/slice/muffin recipes I'd really appreciate it.

Oh you TOTALLY need the Symply Too Good to Be True (books 1-5) recipe books!

You can make lots of regular junky foods with far less fat in them. They have the nutrition panels in there too...

There's regular meals in there too...

I'm making a mud cake from there soon... there's all sorts of biscuits and stuff... I'll come back and add some later...

Thanks Stacey, I will look out for that recipe book next time I'm shopping.

I can't believe that out of all the wonderful women on BubHub no-one has been able to give me a healthy slice/muffin/cupcake recipe yet. :shame: on you all for not sharing them with me, LOL! Might have to go and google :yes:

Come on ladies ...... I'm starting to crave chocolate and might do something stupid (like go and buy some) :banghead: . Gimme some chocky alternatives, and some healthy recipes.

I'll be waiting with baited breath :eek: (that is such a silly saying).

Malteser Fudge Slice

1 cup SR Flour
3/4 cup cocoa
120g Maltesers
2 eggs lightly beaten
3/4 cup sugar
400g light vanilla fruche
1 table spoon oil.

Preheat oven to 180c. Line Lamington tray with baking paper. Sift flour and cocoa into large bowl. Stir in maltesers. Combine eggs, sugar, fruche & oil, then fold into the flour mixture. Spread into tin and bake for 30 minutes. Cool in tin. Dust with icing sugar. Cut into 16 pieces.

I'm off to the supermarket this afternoon, might have to give it a whirl. I'm surprised I haven't heard of that one before (I was on WW at the end of last year but haven't been for many, many months :shame: on me).

what PB said (I have the original cookbook that recipe is in :laughing: )...I sometimes make it with berry yoghurt to make a choc berry slice.

TBH, I don't bake many healthy muffins or anything...because I end up eating the whole batch :o

I'm gonna pick a few to post for you...

Chocolate Slice

BASE:
1 cup SR flour
1/4 cup cocoa
2 weet bix, crushed
1/2 cup sugar
2 tablespoons desiccated coconut
4 tablespoons Flora Light Margerine, melted
2 tablespoons skim milk
1 egg white
cooking spray

ICING:
3/4 cup icing sugar
1 tablespoon cocoa
1 teaspoon Flora Light margerine
2-3 tespoons skim milk
1 1/2 teaspoons desiccated coconut

DIRECTIONS:
Preheat oven 200 (180 fan-forced).

To make base: Sift flour and cocoa into large mixing bowl with crushed weetbix, sugar and coconut. Add melted margerine to milk. Using a fork beat egg white into milk until combined, pour into flour and fold together. Spread mixture over the base of a slab tin that has been coated with cooking spray.

Use the palm of your hand to flatted and spread. You may todip your hand in flour to prevent sticking. Bake 35 mins.

To make Icing: Sift icing sugar and cocoa into a small mixing bowl. Add marg and milk, blend well. Spread over slice while base is still warm. Sprinkle coconut over the top, leave to cool. Cut into 15 slices.

Has 118 Calories per slice.

Choc Fudge Sauce

Serves 12.

1 x 375mL can evaporated light milk
2 tablespoons cocoa
1 tablespoon cornflour
2 sachets (11.5g) Jarrah Choc o'Lait
125g (just under 1 cup) milk choc melts

In med size saucepan whisk milk, cocoa, cornflour and jarrah sachets until combined, cook on med-high, stirring continuously until just boiling. Remove from stove. Add choc melts, mix together until choc has melted. Allow 2 tablespoons per serve. Ideal over low-fat ice-cream or as a fruit dip.

95 Calories per serve. 3.7g total fat.

Choc Pudding

1x 375mL can evaporated light milk
1 1/2 cups skim milk
1 teaspoon sifted cocoa
2 sachets Jarrah choc o'lait
3/4 cup choc topping
2 x 10g sachets gelatine
1/4 cup boiling water

Heat both milks together in microwave for 2 mins. using a wisk, dissolve cocoa, Jarrah sachets and choc topping in milk. Dissolve gelatine in boiling water and beat into milk. Leave to set in fridge.

Serves 8.

130 Calories per serve.

1.3g total fat per serve.

JAFFA CAKE

10 Slices

2 cups SR flour
2 egg whites
1/2 cup sugar
1/2 cup apple sauce (commercial)
3/4 teaspoon bicarb soda
1/2 cup choc chips
1/2 unsweetened orange juice
2 heaped tablespoons grated orange rind

Preheat oven 180. Beat egg whites and sugar together for 1 min. Stir bicarb into apple sauce (it will froth) then add to bowl. DO NOT BEAT but gently fold in flour, rind and choc chips alternately with juice. Pour into a loaf tin that has been coated with cooking spray. ake 35-40minutes or until cake springs back with lightly pressed in centre.

152 Cals per serve, 1.7 g fat per serve.

Yeah - these are great. You can get them at newsagencies for (I think) $12.95 each. Also, I've heard vanilla is supposed to help when you've got a chocolate craving... eg, just smelling it or adding it to coffee instead of sugar etc...
