HI Everyone, I have been given a heap of lemons and am looking for some recipes. I use lemon in my salads and drinks but some other ideas would be great.

Lemon Curd

Makes 3 cups
Ingredients

* 5 eggs
* 3/4 cup caster sugar
* rind of 1 lemon
* 3/4 cup freshly squeezed lemon juice
* 125g butter, chilled, cubed

Method

1. Combine eggs, sugar, and lemon rind in a 6-cup, heatproof, microwave-safe bowl. Mix with balloon whisk until combined, gradually adding the lemon juice while whisking. Add the cubed butter.
2. Place onto a microwave-safe rack or upturned microwave-safe plate and cook, uncovered, for 7 to 10 minutes on MEDIUM (50%) power, stirring every minute until thick enough to coat a metal spoon. Pour into sterilised jars, seal and label. Place in the fridge to cool.
3. To serve, spoon into cooked pastry cases or over hot crumpets or toast.

Little Lemon Puddings

Ingredients (serves 4)

* 4 eggs
* 2/3 cup caster sugar
* 1/2 cup (125ml) lemon juice
* 1 tbs lemon zest, finely chopped
* 1/2 cup (125ml) pouring cream

Method

1. Preheat oven to 160°C.
2. Prepare a water bath.
3. Whisk eggs and sugar until thick, then stir in the juice and zest and gently whisk in the cream. Pour into 4 x 125ml ramekins and bake in the water bath for 20-25 minutes or until just set. Remove the puddings and cool, then cover and refrigerate until needed.
4. Serve puddings at room temperature, dusted with icing sugar.


Lemon Delicious
Ingredients (serves 6)

* 3 eggs, separated
* 2/3 cup (160g) caster sugar
* 1 lemon, rind finely grated
* 2/3 cup (100g) self-raising flour
* 3/4 cup (185ml) fresh lemon juice
* 2 cups (500ml) milk
* Icing sugar, to dust

Method

1. Preheat oven to 180°C. Use an electric beater to beat 3 egg yolks, 2/3 cup (160g) caster sugar and 1 lemon, rind finely grated until thick and pale. Whisk in 2/3 cup (100g) self-raising flour, 3/4 cup (185ml) fresh lemon juice and 2 cups (500ml) milk until combined.
2. Use clean electric beaters to beat 3 egg whites until soft peaks form. Fold through lemon mixture until well combined. Spoon into a 2-litre ovenproof dish.
3. Place dish in a roasting pan and pour enough boiling water in to come 3-4cm up the side of the dish. Bake for 40 minutes or until golden. Serve warm dusted with some icing sugar.



Little Lemon Meringues

Ingredients (serves 6)

* 6 frozen Pampas sweet tart cases
* 160ml (2/3 cup) sweetened condensed milk
* 2 tbs fresh lemon juice
* 2 egg whites
* 70g (1/3 cup) caster sugar

Method

1. Preheat oven to 200°C. Place the tart cases on a baking tray. Bake in oven for 10 minutes or until brown.
2. Meanwhile, combine the condensed milk and lemon juice in a bowl.
3. Use an electric beater to whisk the egg whites in a clean, dry bowl until firm peaks form. Gradually add the sugar and continue beating until the sugar dissolves.
4. Spoon the lemon mixture evenly among the tart cases. Top with meringue mixture. Bake in oven for 2-3 minutes or until lightly browned. Serve immediately.



Lemon Butter
6 eggs
6 lemons
1/4 lb butter
1 lb sugar

1. Using an electric mixer, beat the eggs until light then add the sugar.
2. Place in a saucepan with the butter and grated rind of 2 lemons.
3. Add the juice from the 6 lemons to the egg mixture.
4. Cook over a low heat until thick.
5. Keeps in the fridge for a few weeks.

If you have heaps and heaps of lemons I would make the lemon curd and lemon meringue pies and take them down to the local market and sell them ;)

i just love my grandma's best friend's lemon butter. she makes it so yummy. grandma always saves me some when her friend makes it. i used to save all beth's baby food jars and we would do a trade - lemon butter for the empty jars:D
