Does anyone know why my muffins are always completely flat and never rise? It's so frustrating! I have tried every recipe under the sun - and always the same.
Supposedly I ahve a really fancy kleenmaid oven but I'm wondering if my non-muffing muffins are a result of a stupid oven?
Any suggestions? thank youuu

do u put self raising flour and baking powder in there???
i know its a pretty obviousle thing i am asking lol

LOL sorry have to chuckle about the non-muffing....
Mine used to be flops too till i found out i was mixing them too much...apparently your only meant to stir the mix in not beat them like cakes etc.....just a thought :)

I think...maybe your self raising flour is out of date
that used to happen with my muffins in the past , till my mum told me to get new sr flour and what do u know ..they rose!!

Okay...so none muffing muffins:detective:
First, what type of muffins are you making? I have a NONE failing date and pepita recipe:D
Second, do not add all the milk, muffins are supposed to a thick batter not runny like cakes...iykwim???

I was using plain flower becuase I thought the baking powder made up for it not being self raising. And umm.. yeah stirring not folding....
I'll let you know if my muffins muff next time!!

good luck for the next time...i think once you start using sf flour they will be the most muffyness muffins you'll ever see lol

DH (a chef) has offered this advice:
the brand of flour you use can make a difference. Often the cheaper brands just don't do the job properly. If you've been using the same brand in all your failed recipes, try something different.
Also, folding or beating doesn't make any difference to muffins. They're not that precious ;)

No, no particular brand. We usually buy home brand for home. But he says that sometimes you can find it won't quite do what it's meant to. In that case, try a different brand - but it still doesn't have to be an "expensive" one necessarily.

I make some really mean banana and choc chip muffins and I've never used self raising flour. I use plain flour (1 and 3/4 cups) with baking powder (1 and a half teaspoons). I also try to fold them so the ingredients are just mixed - though I note from the post above that it doesn't matter!
I also use sour cream instead of milk or butter. Anyway they work and they're beautiful...:laughing:
By the way, I make mini muffins not the full sized ones.
