I realise that there was a lite n fruity bake off a while back, so I am going to cut out the LITE bit and just have fruity!!! Lighten it up or laden it up the choice is yours!
The theme is FRUITY.
So guys treat yourselves and lets get cooking with Fruit. I think we all might need it after our Mothers Day treats!!
For any newcomers, all you need to do is prepare a dish that fits with the theme and take a photo then post it on this thread before the closing date.
Entries will close midnight next Saturday 26th May

I can only seem to think of sweet things, but there must be savoury ones as well :confused:
Roast pork with baked apples and pears.
Remember tomatoes are a fruit!!!!!
Mango chicken
Fish with lemon
Lamb with apricot and orange couscous
Warm chicken salad with mandarin
Duck l'orange
Pork in plum sauce

Ok here's my entry.
I had a craving for banana bread yesterday and as i was cooking it i came on to bubhub and saw the next theme was fruit, so it was perfect timing!!
I wish you guys could smell it, so yummy.

I made Raspberry and White Chocolate Friands and Lime and coconut friands with a raspberry coulis.

For the base
# 180g plain sweet biscuits (like Arnotts' Nice)
# 80g butter, melted, cooled
Place biscuits in bowl of a food processor and process until finely crushed. Add butter, process until well combined. Press into pie dish and place in fridge until required.
Filling
# 400g can sweetened condensed milk
# 2 tablespoons golden syrup
# 1/4 cup caster sugar
# 80g butter, melted
or you can cheat and buy a can of the pre-made caramel filling.
# 3-4 ripe banana's - sliced onto the top of the caramel filling. Top with fresh whipped cream and chocolate shavings :wizard:
We have some lovely fruity treats here. Just a reminder that the bake off closes midnight tomorrow.

Kerry can I pls have the recipe for your Lime and coconut friands? I've never actually made friands before but I know how delish they are!

still can't think of anything but meringues with cream and fruit :p
Talk about cutting it fine!! I made Mango Mille Feuille but for some reason the mango cream filling didnt turn out as thick as its supposed to. Used Pure cream instead of thickened so that may have ruined it. Oh well.... looks like cr@p but it tasted good!!
