I'm having some mums over in a couple of weeks for pre-drinks/finger foods prior to us going out for cocktails:smiliedance:
The pre-drinks I'm doing are champagne with shots of rose, violet, jasmine or lavender syrup in them..yuuuummmmyyy.....so since I'm being quite different with the drinks I also wanted some swish finger foods to go with the drinks.
I was thinking volavons...but have never done them before...my mum used to do chicken ones...anyone have a tried and tested way of doing them?
Also, was going to do smoked salmon sandwiches with cream cheese and rocket cut into little squares.
I sort of want small finger food ideas, but also something that is a bit substancial since we are going out for cocktails:D
Any ideas very muchly appreciated!

A really easy finger food that I love is asparagus spears with salmon wrapped around them...........they are so quick to prepare and taste yummy!

Is that just the tinned asparagus? That would be yummy!!!

If you cut sushi rolls into about 1cm slices with a very sharp, wet knife, that is easy and yummy too.

yeah tinned ones are fine, actually I think they taste nicer! also maybe a cheese platter would be a good idea, will go great with the champagne!
Instead of the smoked salmon sangas I buy rye bread and cut it into rounds (just with cookie cutters)
add some chives to cream cheese spread it on the rye bread top with smoked salmon and then with two bits of chives in a cross. Like an open sandwich. It just dresses it up a bit.
Also I do stuffed mushrooms, I buy the little mushies, take out the stalk.
Throw together tinned tomatoes, stuffing mix, chopped bacon, parmesan cheese (the real stuff, I buy the italian grated from the Italian deli) and some italian herbs mix it all up and put into the cavity of the mushies.
nb fry the bacon first so it goes crispy
Bake at 180 for about 10-15 minutes.
I also make these for dinner sometimes using the big flat mushies they are great.

Oh, kerry, those stuffed mushies sound delish!!! I will definitely give them a go.
My bro made me the best snack the other day.He cut turkish bread into fingers(you know how it goes a bit holey)then stuffed it with salami,olives,tomato and brie on top then popped them in the oven.So YUM!!
You can do the same with a french stick.Slice it up in circles(if ya know what i mean) toast in oven then top with yummo toppings like salmon/roast beef/ham/cream cheese/swiss cheese whatever.

For finger food, we make mini sweet potato and sage frittatas. We use a mini muffin tray to cook them. Cut sweet potato up small chunks and roast them with a bit of oil. When they've cooled, add some cheeses (ricotta/parmesan) and put into mini muffin tray. Top with a sage leaf. Mix cream and eggs and pour into muffin tray then bake until set. Delicious warm or cold.
Grill/fry some lebanese bread and cut into wedges and make some hummous with a can of chick peas, some lemon juice, tahini and garlic.
Prawn pot sticks or thai fish cakes with sweet chilli dipping sauce.
In a mini muffin tray, place rounds of ready rolled puff pastry. Freeze while you make a filling or whatever you like - sauteed leeks or onions. Bake at 200 for 18 minutes, then add some brie to each one and cook a further minute.
I'm sure whatever you make is going to be wonderful.

For an easy way to do vol-a-vents, you can lightly fry off some chicken, chopped up in small pieces, add cream and a couple of tablespoons of any mustard, cook over medium heat until chicken cooked through and sauce is thickened, then spoon into the vol-a-vents. Otherwise you can cheat and use a jar or packet mix, I have done honey mustard chicken and lamb curry ones before for parties, and filled the bite size vol-a-vent cases.
Now I want some for dinner.:yes:
