I have some chicken tenderloins defrosting and a can of tomatoes (the flash chopped thick stuff with garlic and herbs added in a sauce ect)..
I need something for tea... what else can I add and how would I cook it?
Sorry to be so vauge, but I'm really struggling to think of something- all help appreciated! :D :D :thumbsup:

grill or pan fry the chicken then heat the tomatoes and pour over
or crumb the chicken, put a little tomatoes on it with cheese on top and bake:D

Ooo I like that second option! Anything with crumbs and cheese is a winner with me :D

zada stole mine, I was going to suggest the crumb, top and cheese...
If you had tortillas you could do enchiladas. cut the chicken a little smaller and cook with some of the tomatoes. wrap in the tortillas and put in a baking tray. top off with the rest of the tomatoes and some cheese and then melt the cheese on top.

Ok. Going with the crumbed chicken, cooked off and with the tomatoes added. Sprinkle cheese over. Continental pasta packet on the side (so no crumbs to limit carbs, DH is Type 1 diabetic). Sounds good!
I'm so dumb with meals lately. I need it all spelt out for me or I'm useless :laughing:
This is why DH cooks 80% of the time :laughing:
Chop the chicken up, cook with some garlic, add the tomatoes. Boil a pot of pasta.
Combine everything together stick in a baking dish, sprinkle with cheese and bake until the cheese melts.
Taa Daa pasta bake.

when we crumb things we use cornflake crumbs rather than breadcrumbs. Does this fit DHs diet?
ETA - you can buy them, you don't need to make your own...

Well, he can't have a bowl of cornflakes but I'm sure the crumbs would be fine, he'd just have to forfit other carbs in the meal for them (bread/pasta etc).
They sound very yummy and crunchy! I have seen them in the supermarket, now I come to think of it.
Thanks for the ideas girls, I ended up stir-frying them in the electric wok with onion and garlic, then adding the tomatoes and simmering for a while. Served with last nights Low GI wholegrain pasta and some steamed vegies. :thumbsup: Very simple and nice! I think the trick was the special can of tomatoes- thick and saucy, really like a jar of pasta sauce actually. A normal tin would have been too watery, yuck.
