I have some veal scallopini which I have defrosted and now am trying to think of what to make with it.

Any ideas?:chef:

When you say scallopini do you mean the thin pieces of veal like schnitzel?


If so you could crumb them to make schnitzel. You could then eat them as is or add some spaghetti sauce & mozzarella cheese and put them under the griller.
You could coat them in a little seasoned flour, fry them up a little garlic, butter and olive oil. Leave a little oil in the pan, pour in some cream, add some basil (leaves are better but jar is fine), cherry tomatoes and put the veal back in and simmer for a couple of minutes (don't boil).
Chop some bacon and onion. Spread a layer of mustard on the veal, put a little of the bacon and onion mixture on it and then roll the veal and do it up with a toothpick. Brown them in a frypan then transfer to casserole dish. Make a gravy and then pour into the casserole dish and bake until the meat is tender.That's all I can think of at the moment.

veal boscaola (sp) panfry the veal and make up a cream sauce with bacon and mushroom.
