View Full Version : Quick and easy dinners

Hi everyone

Normally I have plenty of time to experiment with cooking but since having a newborn in the house I've got next to no time to make dinner! I'm sick to death of pasta bakes.. so does anyone have any quick and easy dinner recipes that they wanna share? We eat basically anything, but the healthier the better..

Chicken Chasseur is my fav thing to make for dinner its a nice easy last min food.

i buy the prepared sauce satches
then u just cut up your chicken fillet
add cut up mushrooms and Onions
and however much water it says to add to the satches and 2 table spoons of tomato paste.

mix it all up and stick it on a low heat.
put your rice in the micro and then your done.

only takes me about 15 mins from start to dishing it up.

Okay this is very easy but yum and quick.


Hawaiian Mince

500g mince
1 diced onion
1 can tomato soup
1 medium can crushed pineapple

Brown onion and add mince. When mince is cooked, add soup and pineapple. Simmer until thickened.

Serve with rice or mashed potato and vegies.

Anything in the slow cooker!!! Chuck it on in the morning by tea its ready yummmmm:D

Shepards pie, lasagne beef casserole - these can all be frozen too so cook a little extra so you have dinner for a night when you cant cook

Stir Fries are always easy, good old steak and 3 veg is easy

Can you grab some marinated kebabs from the deli at the supermarket, then add some veges and mashed potato?

DP made something lovely the other day.

He pan-fried some seasoned (with salt and pepper)fish (just to crisp it on the outside) and then threw it in the oven to finish it off and keep it warm.

He then put some asparagus in the pan with garlic... and it came out all nice and garlicy (obviously...lol).

He then made mashed potato and added some snow pea sprouts to it.

The whole thing was lovely and fairly simple.

Maybe you could also check out super food ideas or another cooking magazine? I always get Super Food Ideas and am forever cooking from it. I love the magazine!

You can do some simple pastas (google different pasta sauces... like carbonara, or whatever) and just add them to pasta (you can make big batches of the sauces and freeze them in containers...and just pull them out and add them to cooked pasta when you want to).

There's always things like Tacos and Enchiladas and Burritos and all of those things too....

What about spaghetti? That's my easiest "I'm lazy" dish. lol.

Or hamburgers (you know, rissoles with salad on a roll).

Easy yummy meal:

Lightly fry some chopped chicken, whichever cut you prefer, any vege's you like, I do onion, sometimes mushroom or capsicum, shallots if I have ithem, you can add other things like squash or zucchini, if you want. Anyway I also add bacon, if I have it, then pour in a carton of cream. I make alot and need to keep it low fat so I usually use half cream/half evaporated milk, then stir in a couple of tablespoons of mustard, what ever kind you like, I use australian, sometimes wholegrain, and sometimes hot english. Stir it all around and allow to cook down, over a low to medium heat until the meat and vege are cooked through and it has reduced some. If it gets to thick add a little more cream, if it isn't thick enough, add some cornflour.
Serve either over rice or pasta or in vol-a-vent shells that have been lightly warmed, with vege's or salad.

Takes about 20 mins and is very nice....looks like you took ages too!

you cant beat a bag of frozen stir fry veges added to some diced chicken or beef in the wok, just add olivia oil, garlic and lime juice and you have a yummy dinner, maybe some soy sauce or somre pre-packaged stir fry sauses

Meals that i find to be quick and easy:


Pasta bakes
Stir frys
Honey mustard chicken with veges and rice
Spaghetti
Home made pizzas
Tacos


It also helps to prepare things a little earlier in the day (as in chopping things up etc) that way when it comes to cooking it you can just chuck it all together :D
