Made these and they are so yummy, so thought I should share...... :D
Rasberry-spiked chocolate brownies
200g dark chocolate, chopped
250g butter (yeah these are healthy ones :rolleyes: )
1 3/4 cups brown sugar
4 eggs
1 1/3 cups plain flour
1/4 teaspoon baking powder
1/3 cup cocoa powder, sifted
1 1/2 cup rasberries, fresh or frozen (I used mixed berries)
Preheat oven to 180 degrees
Place chocolate and butter in small saucepan over low heat and stir until melted and smooth.
Place in a bowl with the sugar and eggs.
Sift over flour, baking powder and cocoa and mix to combine.
Pour into 23cm greased square cake tin lined with non stick baking paper (I used rectangle cake tin, think it was 26 X 20cm).
Top the mixture with the rasberries and bake for 45 mins or until set.
Brownies should be very fudgey in the middle.....
* No need to defrost frozen berries and stores well in air tight container, after a couple of days heat up in microwave and top with cream :D
