OK so not all of us are lucky enough to get breakfast in bed or even a break from the kitchen duties on Mothers Day so here's a chance to treat yourself to something nice (even though you still have to cook it and clean up after!).

The theme is MOTHERS DAY TREAT.

Think of something you really luurrvve to eat but dont often have. It can be sweet or savoury but try to resist taking a photo of a block of Lindt chocolate and submitting that! Show off your cooking skills and spoil yourself!

For any newcomers, all you need to do is prepare a dish that fits with the theme and take a photo then post it on this thread before the closing date.

Entries will close midnight next Sunday 13th May.

Welcome back Wondermum!! Nice to see you've been cooking up a storm again!

OK - decided I didnt want to be cooking or cleaning on Mothers Day so I made myself breakfast in bed this morning (except I ate it on the balcony).

Its my version of Eggs Benedict with grilled spinach and grilled tomato. SInce Hollandaise sauce is usually a big no-no I smothered the eggs in it. Apologies though, you cant see the Eggs!!
I also had freshly squeezed orange juice and fruit yoghurt. Soooooo stuffed but thoroughly enjoyed it!!

Yummo teeny t did you make hollandaise sauce...how????? And what is on it muffin, spinach, eggs(poached) and bacon????

TeenyT
10-05-2007, 03:41 PM
Yep, its just steamed spinach, grilled tomato, crispy bacon and a poached egg on a toasted english muffin. The Hollandaise is home-made. Its a bit time consuming but tastes so much better than the bought stuff:
1/4 cup water
2 Tabs lemon juice
1 bay leaf
about 2 Tabs chopped spring onions
1 tsp whole black peppercorns
3 egg yolks (use the leftover whites to make mousse or meringue)
185g butter, chopped into cubes

1. Mix the water, juice, bay leaf, onions & peppercorns in a pan and bring to the boil. Reduce heat and simmer down to 2 Tabs of strained fluid. (this doesnt take long at all so careful not to simmer it all away). Cool.

2. Whisk egg yolks and cooled juice mixture in a bowl over hot water (or a double saucepan). Drop in cubes of butter and whisk until each cube is completely dissolved into sauce. Continue until all butter has been used and sauce starts to thicken slightly. If the sauce is too thick for your liking just add a small amount of hot water (1 Tab) and stir in.

that benny looks so good!!!! they are my fav!!!

if you wana try a simple hollandaise, this is wat i made each mornen at the cafe, it makes a fairly decent amount

1st grab a block of butter, 500g, chuk in micro to melt.

meanwhile... in a milk shake jug (or bowl, doesnt matter) put 1 whole egg and 2 egg yolks, pinch salt, pinch pepper, 2 cap fulls of vinegar (or lemon juice, or half/half).

get your melted butter out, make sure you have let it cool a little, if its too hot the mixture wont thinken enough

with your whiz stick blender slowly add the butter to egg mix..... and its done!

super easy, takes 2 minutes to make!
