OK I got some Breast fillets here.......
What should i do with them? LOL other than cook them what can i make that will be Yummy?
Im Sick of chicken cooked in the fry fan or George
So any ideas would be great!

Apricot Chicken ...
Dice the chicken breast and fry until browned along with sliced onion.
Put into casserole dish and add a can of apricot nectar mixed with french onion soup and cook in oven for around 3/4 to 1 hour. Serve with rice or noodles.
It's an easy favourite in this house!

I had the same decision to make this afternoon...
chicken fillets - what to make?
I butterflied mine, pound them out a bit and then rolled them and wrapped bacon around them. Chicken filet mignon tonight!
I would normally make a mushroom sauce but the Junior Dukes won't eat mushroom so we're having garlic butter instead with roast potatoes, pumpkin & carrot.

This is one of my fave recipes - you can use thigh fillets or chicken breast. You will need (for two serves)
2 chicken breast fillets
2 cloves of garlic
4 small button mushrooms
50 gram of macadamia nuts (preferably roasted and salted, otherwise you could roast/season yourself)
1 tblsp butter
2 tblsp honey
2 tblsp soy sauce
Preheat oven to 190 degrees
In a saucepan melt butter, add macadamia nuts, diced mushrooms, diced garlic and pepper, stir constantly until golden, remove from heat.
Flatten chicken breast and spread this filling onto the chicken and fold gently.
Place chicken parcel in uncovered ovenproof baking dish. Mix soy sauce and honey together and pour over the chicken
Cook in oven for 20-25 minutes, basting occasionally.
Serve with a side salad (we also usually make a nice potato mash, as the sauce over that and the chicken is delish!!)
The recipe is longwinded, but it is quick and easy to prepare and tastes delish!! Enjoy!!

As Jess has said...Chicken Burgers/patties.
I pulled chicken breasts out of the freezer earlier to mince and make into patties (egg, spring onions, sweet chilli sauce, seasonings). Any left over patties will be for lunch tomorrow with a yummy salad.

you can stick them in a plastic bag with soy sauce ,chilli flakes and garlic ,leave for an hour to marinate and fry.yummy yummy

Two of my specialties -
Creamy Pesto Chicken Pasta
Cut chicken into strips, fry up with garlic, red onion, sliced zuchini, capsicum, sundried or fresh tomato, and any other vegies you like.
When it's almost cooked through add 2 tbspns pesto, stir through. Add enough cream to coat everything, then stir it all into cooked pasta (fettucine and verde work best).
or
Chicken Stirfry
Cut chicken into strips, fry up with garlic, onion, thinly sliced carrot, zuchini, bok choy, spinach, baby corn etc etc.
When it's cooked add about 3 tbspns oyster sauce, smidgen of sweet chilli sauce, and a dash of soy sauce.
Serve with rice or noodles.
Extra yummy with cashews and/or sesame seeds sprinkled ontop.

Chicken schnitzel breasts crumbed in a mixture of crumbs, crushed potato chips and parmesan cheese.
Chicken Teriyaki - made from scarcth, (really easy)
Chicken breasts stuffed with fetta, pine nuts, basil and sun-dried tomato and wrapped in proscuttio with a light cream sauce.
Warm chicken salad

Chicken Kiev - flatten - stuff with garlic butter - roll up - crumb and bake/fry
Chicken cordon-bleu - flatten - stuff with cheese and bacon - roll up - curmb and bake/fry
Crispy Fingers - slice - crumb - shallow fry
Shishkebabs
Stroganoff
Filo/puff pastry Parcels : throw in whatever veges and bake. Serve with a white/cheese/herb sauce
