Well, I just had homemade nachos for lunch and MAN OH MAN! they were the Bestest ever!!! they were absolutely devine!!!
:chef: Here are pics!!! btw they weren't all for me :laughing: shared them with DF!! AND there is HEAPS of mince still leftover!!!
In these pics, I used less than half the total mince mixture! so this recipes serves lots of people! we were stuffed LOL!

Usually i just make taco style mince with taco seasoning, then layer corn chips, cheese, mince, salsa, and cheese etc but i never realised how much that mexican taste overpowered everything until i made a different, more savoury style of mince! oh and didn't use salsa either!
Nacho Ingredients
Plain corn chips
mix of tasty and mozzarella cheese - however cheesy you like it!
beef mince mixture
mashed avocado
light sour cream
diced tomato
jalepenos
sliced spring onion/shallotsBeef Mince Ingredients
1/2 diced red capsicum
1/2 diced brown onion
finely chopped big garlic clove
olive oil
400-500g lean beef mince
2 tb paprika (to taste)
little shake of chilli flakes (to desired heat level)
1-2tb Worcestershire sauce (to taste)
2 tb tomato sauce
1 tin crushed tomatoes
water
1 tsp sugar
pinch of salt (to taste)
1 tsp dried oregano1. Put olive oil in saucepan, add capsicum, onion and garlic - cook on low heat till soft.
2. add some of the paprika to coat veges - keep heat low so don't burn
3. add little water and mix
4. add little more olive oil and put mince in
5. break up mince with wooden spoon so mince is not too chunky, add little water as need be to keep mince moist & slightly liquid - not dry - also helps break down mince finely.
6. once mince is cooked add tin tomatoes, more paprika, chilli flakes, sugar, salt, oregano and stir
7. add Worcestershire sauce and tomato sauce and mix
8. simmer till reduces some liquid - i did that for about 20 mins - helps develop flavour. In meantime taste test to see if needs any more herbs or spices etc I liked mine with a fair bit of paprika - but good thing is you add things as you like till u get the flavour you want!
Layer corn chips in dish
sprinkle with cheese
microwave for 30 secs
add mince layer
add more cheese to you liking
microwave for about 2 mins (depending on power of microwave)
then i pop under grill till cheese bubbles but before corn chips brownREADY!!!! and soooooooooooooo DELISH!
top with sliced spring onions and serve with accompaniments of mashed avocado, sour cream, diced tomato and jalapeņos!!
