Hi everyone,
I would like to make pumpkin soup and never have before.
So I googled pumpkin soup recipes and up comes about 2 billion recipes, all really different! Ahhhh so complicated, who has a favourite tired and tested recipe?

I just do the good old onion,pumpkin, a few potatoes if you want and chicken or vege stock... A bit of salt and pepper at the end, blend and whalah..
A swirl of cream to mix through in your bowl is yummy to... :chef:
There is so many different recipes but i fing the basic is the best.. (and all we used to do in the restaurants i have worked at to..)
You can add herbs if you want but i dont think its needed in a pumpkin soup..

I don't know how to work my blender :o
(It's still in it's box from Xmas '05:eek: )
Could I cook it all with and kind of simmer it and keep mashing it and add stock and cream and stuff?

This is my all time favourite pumpkin soup recipe....I haven't come across a nicer pumpkin soup yet (even in restaurants).
1 sweet potato(orange, chopped
1 onion, chopped – lightly fry
1 butternut pumpkin, chopped
3 potatoes, chopped
Chicken stock – enough to cover vegies – 1 stock cube to 1 cup water
2 bay leaves
2 tblsp tomato paste
Sour cream – If you want but it is nice
Fry onion – add everything else except tomato paste and simmer for about 1 hour
Then take bay leaves out – add tomato paste. If you want serve with a little bit of sour cream.
I also put cracked black pepper on mine when it's served up...yummy!!!!
You need to blend it.....just get a stick blender....it takes 2 seconds and is super easy to use. I picked one up from target for $26 last week and it works a treat!

My friend makes the best pumpkin soup! i dont even like pumpkin, but i love the soup she makes.
Apparantly her secret is that she roasts the pumpkin first.
She uses pumpkin onion and garlic, boils it in vege stock, blends it up and then adds salt pepper and some cream.

Mine is pretty simple but yummy!
A small kent/jap pumpkin (chopped and peeled)
1 onion (peeled and diced)
600 mls chicken stock
generous pinch of all-spice (key ingredient)
butter
milk to taste
S & P to taste
Melt butter and add onion. When golden, add pumpkin, all-spice, S & P and stock. Cook until well mushed (about 40 mins) and blend well with a stick blender. Add milk and enjoy! :chef:

Darn I think I'll have to work out how to use my blender/food processor thing. Or just go buy a stick thing :D
Either way we won't be having pumpkin soup tonight :crying:

Oh, yes, as the other poster has said. If you roast the pumpkin and then blend it with milk, S & P and spices, it is delicious! :chef:

Phineas - the stick will work well. Is it plastic or stainless steel? If it's plastic make sure the stove is switched off and the soup has cooled a little or the stick will melt. Trust me:o
My recipe for Pumpkin Soup
pumpkin chopped
onion chopped
chicken or beef stock
a couple of carrots chopped
a couple of celery sticks chopped

Do you remember the Soup Nazi from Seinfeld? There is such a place in New York. And this is his recipe for Sweet Potato Soup (ok, not exactly pumpkin...). I've made it before and it is delicious and dead easy to make:

4 sweet potatoes (about .4kg each)
8 cups water
1/3 cup butter
1/2 cup tomato sauce
2 tablespoons milk
2 teaspoons salt
1/8 teaspoon pepper
dash thyme
1 cup cashews (split in half)
1. Preheat oven to 190 degrees. Bake the sweet potatoes for 45 minutes or until they are soft. Cool the sweet potatoes until they can be handled.
2. Peel away the skin, then put the sweet potatoes into a large bowl. Mash them for 15-20 seconds, but you don't need to mash
them until they are entirely smooth.
3. Spoon the mashed sweet potato into a large saucepan over medium/high heat, add the remaining ingredients and stir to combine.
4. When the soup begins to boil, reduce the heat and simmer for 50-60 minutes. Cashews should be soft.
Makes 6-8 servings.

Looove pumpkin soup!!!
Pumpkin, potato, carrots, onion, bacon, chick or beef stock. Throw in all in together and let it simmer for ages.
Sometimes I add a TSP of brown sugar if the pumpkin isn't real sweet. Makes it really yummy :thumbsup:

The easiest Pumpkin Soup in the world -
(as discovered when DD went off her pumpkin mash)
Chop, cook and mash pumpkin as if making for bub.
Add a little vege stock to thin it out,
Return to heat until it starts to simmer,
Add equal parts stock and milk, to whatever thickness you want.
Heat through.
Season.
Eat.

Just wanted to bump this up...
If you're making p/soup, the BEST trick to cutting the pumpkin is to nuke it for 10 minutes in quarters then peel it. So easy!
I used to roast mine too, but found it a bit sweet.
