OK, I created the below last night. There are no real measurements on this but it was pretty awesome.

Beef steaks (4 small)... tenderised until flat and thin.
Steamed spinich (about one bag, but remove the steams off the larger leaves)
ricotta cheese (about 150gms
cheddar cheese (about a hand full)
garlic (about 2 colves
nutmeg (a good shake)

Steak roll
Mix the ricotta, cheddar, garlic and nutmeg together. Quick grill the steaks will a little cracked peper. Lay the steakes flat and place a layer of spinich and a layer of the cheese mixture. Roll the steak layers like a pinwheel and hold together with toothpicks. place in a baking dish and bake in the over for around 20 to 25 min on 180 degrees (or unless you are using my oven and then it is 220 degress :( )

Tomato sauce
1 x can of diced tomatoes (plain)
a good squirt of tomato paste (or maybe a tablespoon.
2 x cloves of garlic
Red wine (i'm estimating about a 1/4 of a cup or just under)
Italian herbs or fresh basil if you have it.
a splosh of wistoshire (sp?) sauce.

Mix together on the stove and bring to boil. Then simmer for about 5 min or so. Spoon over steaks when serving...

Thats about it... was a big hit last night... enjoy :chef:
