I'm after a delicious cupcake recipe for my DD's first birthday cake. Does anyone have a well tried and tested one? Thanks!

ummm... yep.

1. Open up packet of white wings cakemix.
2. Cook according to directions on pack, but in patty pans.

I am sooo lazy, I never (and can't) make cakes from scratch!

Yep. I love my cupcake recipe. Soooo easy to make and really yummy. I made cupcakes for my DD's 1st Birthday. My DD has a preservative intolerance so I have to make most things from scratch (no packet mixes for me :no: ). Every time I've made these they've turned out perfectly. Admittedly I use muffin paper cases and cook them for a little longer (using the dip the knife trick).

Cup Cakes Recipe

Ingredients: (makes 24)

125g Butter, softened
1 cup Caster Sugar
Tsp Vanilla Essence
2 cups Self Raising Flour
2 Eggs
1 cup Milk

Method:

Preheat oven to 180oC. Line two 12-hole patty cake pans with paper patty cases. Beat butter, caster sugar and vanilla together until light and creamy. Beat in eggs one at a time. Sift flour and add alternately with milk, beginning and ending with flour. Spoon batter into prepared pans, filling each case by about two-thirds.

Bake 12-15 minutes or until golden and firm. Transfer to a wire rack to cool.
