View Full Version : Creme Brulee Recipe Please?
Hi everyone, well i have a brand new set of Maxwell Williams ramekins and a brand new butane blow torch ready to fire up, just need a good recipe for creme brulee please?
290ml double cream
1 vanilla pod
4 egg yolks
15ml caster sugar
for topping:
caster sugar
Method:
Put the cream with the vanilla pod into a pan and heat to scalding point, making sure it does not boil. Remove the vanilla pod.
Set the oven to 170C.
Beat the egg yolks with the caster sugar and when light and fluffy, stir in the warm cream. Place the mixture in the top of a double saucepan or in a bowl over a pan of simmering water, on a gentle heat. Stir all the time until the custard coats the back of the spoon. If using vanilla essence, add it now.
Pour the custard into an ovenproof serving dish, place in a roasting pan half-filled with hot water, and bake for 12 minutes to create a good skin on top. Refrigerate overnight. On no account break the top skin.
Next day, heat the grill.
Sprinkle the top of the custard with a 5mm even layer of caster sugar. To do this, stand the dish on a tray or large sheet of greaseproof paper, and sift the sugar over the dish. Collect the sugar falling wide for re-use.
When the grill is blazing hot, place the custard under it, as close as you can get to the heat. The sugar will melt and caramelize before the custard underneath it boils. Watch carefully, turning the custard if the sugar is browning unevenly.
Allow to cool completely before serving. The top should be hard and crackly.
Serving Suggestion: To serve, crack the top with a serving spoon and give each diner some custard (should be creamy and barely set) and a piece of caramel. Creme Brulee is also good made in individual ramekin dishes. In this event, bake the custard for only 5 minutes.
Thanks Brooke, that was quick! I will try it tomorrow, not the kind of thing that will help me lose my last bit of baby weight but I'm a sucker for sweets!
