Does anyone have a fool proof recipe for fudge? Caramel or Chocolate in particular.

Yep,
Here is the recipe I always use. So easy and you can adapt it to different flavours really easily.
400g Chocolate (be it dark, milk, white, mint, orange, whatever you like really)
1 tin condensed milk
50g Butter
Melt all ingredients in a saucepan over a low heat until combined. Pour into a lined lamington tin. Refrigerate until set. Cut into squares.
I have also made it with mint chip chocolate. Also can add slivered almonds, coconut, honeycomb or anything else you like to it just before pouring into the tin. So very easy!!

Chocolate Fudge
Serves 10 or more
450g dark or milk chocolate, chopped
395g can sweetened condensed milk
50g butter
Lightly grease a 20cm square cake pan. Line base and sides with baking paper.
Combine all ingredients in heatproof bowl over a saucepan of gently simmering water. Cook, stirring, for 4-5 minutes until smooth.
Spread mixture into cake pan. Chill for 3 hours or overnight, until mixture is firm. Use a hot knife to cut fudge into squares.
Keep fudge chilled in an airtight container.
I have an old family recipe but it's not the fudge that is soft and chewy, ours is all crumbly and melts in your mouth. I think it's fool proof as it involves exact timing but since my nanna died I have really been the only oneto make it like she did. Let me know if you want it.

OOOOH Trumpet, that sounds delish. There is nothing like the recipes that our nannas made. I would really love it too if you don't mind sharing with me?

I have an old fashioned recipe....it's my Great Granny's recipe too! :D I never eat any other one!
2 cups white sugar (don't substitute AT ALL)
1/2 cup milk
1 tab butter
2 tabs cocoa
1 pinch cream of tartar
1 pinch salt
dash vanilla
Boil together in saucepan for 7-10 mins (i usually do it about 8 - only start timing it when it's actually boiling). Take off heat and beat with a spoon (NO BEATERS!) until thick, and pour into greased tin (i use a loaf tin). When partly cool, cut into small squares.
(If it goes hard really quick after not much beating, it means you've boiled it for too long....takes a bit of practice to get the time right :)).
This just melts in your mouth....delish! :chef:
Mine is similar to shazbutts'
4 cups of white sugar (DO not substitute for any other)
4 tblsp Cocoa
Vanilla
2 teasp butter
4 dstsp Golden Syrup
1 cup of Full Cream Milk
Put all in a large saucepan and boil for 8mins only (you have to do this exactly on 8mins so set the timer on the microwave)
Beat with Rotary Beaters (Do NOT use a bamix as it will melt it) until slightly thick.
Pour into a metal baking tray with a depth of at least 1cm and allow to set partially and cut into squares.
This will take approx 30 to set fully and does not need to go into the fridge.
I hope you like it as muxh as my family. I still have to make it ever xmas and post it to my uncle.:D

I should have written on mine what Trumpet said too don't substitute white sugar for any other, and for mine, ONLY use a SPOON, not beaters. :thumbsup:

Hi all,
Just wanted to say I made 1st time Mummys fudge today. I made it with 1/2 mint aero bar chocolate and just normal cadburys for the other 1/2. It was absolutely delicious.
