Does anyone have any Thai inspired recipes that aren't loaded with fat? The only requirements is NO salads ;) and to be suitable for a family meal (including my 13 month old who can tolerate some chilli in his foods - just not blazing!)
Oh and if anyone has a recipe for a coconut flavoured rice side dish, I would be very grateful!

Hi, i can help you with the coconut rice. It is a Malay recipe though. This is how i make it, and i use a rice cooker.
for 5 cups long grain rice i use 1 420gm tin of lite coconut milk and top the water up until it reaches the 5 cup mark. i also sprinkle a couple of teaspoons of salt and mix it in. You can also put a few screwpine leaves for extra flavour too. I buy these frozen from Asian food shops ( they can be called Pandan leaves too) and i just tie 2 or 3 together ( washed ) and dig it into the middle of the rice cooker.

thanks! sounds delish. o you have any other Malay recipes? DP loves Asian foods (grandmother is Chinese) but I'm so hopeless at finding good recipes.

ooh that coconut rice recipe sounds delicious! I make mine just like regular rice, but with cocnut milk and a bit of garlic. May have to try yours!
I have a recipe I got off ninemsn, my son absolutely loves them and they are great cold too! Don't take very long at all to cook/prepare either!

My gosh, i have heaps! My Dad is Malysian and his mum taught my english mum to cook! My mum is better than alot of the malays at cooking!

we call this our shove in a pot chicken. It isn't hot and my kids ( nearly 3 and 2 love it)
in a fry pan sautee in a little bit of oil 1 tspn mustard seeds, 1 tspn fennel pwder, 1/2 curry leaf twig, 1/2 sliced onion.
in a pot shove ( lol) in 1 tblspn funugreek seeds ( i always add heaps more i love them), 3 cloves crushed garlic, 4 red chillies ( sliced in the middle), 4 green chillies ( sliced in the middle), 1 onion sliced, 1 curry leaf twig, 1 tspn tumeric, 1 tblspn coriander powder, 1 1/2 tspn mustard seeds, 1 tin of lite coconut milk, 1 tin of whole tomatoes, a few potatoes cut into chunks, a few carrots also cut into chunks, and chicken pieces ( about 1.5 kg's). Then add the sautee'd ingredients and let it cook on the stove top. You can leave the chillies whole if you wanted to or leave them out, it hasn't really mad emuch difference when i have made this dish. I usually just put a few dried chillies in whole just for my self. and i always add more seeds cause i like the texture of them.
I serve it with rice or it is nice with toast too!

this is a beef recipe and instead of deep frying the potatoes i roast them until they are crispy. Just cut them in half and slice about 1 cm thick.
In a pot put cubed beef and enough water to cover, boil for about half an hour or longer for tender beef. You need a really good soy sauce ( not a sweet one) that is thick. Add about 3 table spoons of soy sauce, salt and pepper to taste, 2 cloves crushed garlic, about a teaspn of grated or minced ginger and an onion or 2 cut into lge cubes. allow to cook and the sauce should thicken. about 5 minutes before serving add some frozen peas and the fried or roasted sliced potatoes. This is also served with rice.

I'll add a few more over the next few days!
I do an untraditional Thai beef salad, the only salad in it is onion and tomatoes, I fry the beef and also fry some vermicelli noodles, and then dress with a thai style dressing with lots of garlic, a little chilli, lime juice, fish sauce, lemongrass and a little sugar, my 4 year old and 16 month old love it.
