Good morning all,

I feel like an omelette for breakfast, anyone have a yummy recipe for this? Ta muchly :chef:

whisk 2 eggs, cube cut ham and tomato, and grate some cheese!!!
then heat the frying pan and add a little butter. pour the egg into the frying pan, wait for it to almost cook throun and flip over.
then add the ham tomato and cheese and fold the egg in half. cook on both sides for a few seconds, i always cook until the cheese is melted!!! then eat!!!!
YUMMO!!!

I chuck in chopped up zuchinni, capsicum, tomatoes, mushrooms, grated swiss cheese, little bit of garlic and parsely.

Mmmm I just did a search for omelette ideas coz that's what I'm craving tonight, and since I have no eggs I'm going to have to go down to the shops... But this is what we are having for dinner tonight! Yummo!

Does anyone saute the ham and tomato before hand?

The trick with omelettes is that they mustn't be overcooked.

Take 2 or 3 eggs, a splash of milk and a little salt and pepper. Beat very lightly with a fork, just enough to mix.

In a small frying pan, melt a reasonable knob of butter on a high heat until sizzling (but not quite burning). Pour in the eggs, then use a butter knife to gently push 'wrinkles' of the cooked bottom layer roughly into the middle, allowing more uncooked egg to get to the bottom of the pan.

(imagine you're trying to scrunch a teatowel into a very loose 'nest' without picking it up)

Repeat this every few seconds until there's almost no liquid left - but it should still be quite gooey on the top. Remember, it'll continue to cook in its own heat.

Tip onto a warmed plate - the fancy way to do this is to flip a third of the omelette back onto itself with the knife, and sort of roll the folded section onto the plate, which should carry the last third with it, leaving the seamless middle part on top.

Hard to describe, extremely easy to do. (maybe after a few practice goes :p)

If you want a filling, fry it separately, and add just before tipping out.

Personally, I like mine with just a little grated cheese on top, and stuck under the grill (use an oven-proof plate) for a few seconds to melt. If you're going to do this, cook it rather less in the pan, so that the heat of the grill doesn't overdo it and leave you with a chewy pancake.

Serve with crusty bread and butter.

Yes, it's 30 seconds more trouble. Trust me, it's well worth it. And yes, it's terribly bad for you. Tough.

We usually saute the ham, mushrooms, tomato and capsicum before hand, put it aside and then make the omlette, pretty much as per Mr Noodles instructions. Sometimes we get too lazy and hungry to grill at the end, but it is so worth the wait!! Yes, its not the most healthy meal, but DH and DD love it too!!

Well I just satisfied that craving tonight for dinner, and I subjected poor Mr Chicken to having omelette for dinner. He loved it!

My fav omlette recipe is spanish style
with finely sliced potato, onion tomato and a bit of cheese..
might verge on being technically more of a "slice"
but its excellent :D
