At the risk of sounding like Pamela Clark,

if anyone is looking for homemade apricot bars *note: not the entirely apricot ones - but the more like soft muesli bar types*....

I've just road tested the Apricot Bar in the Babies & Toddlers Good Food WW cookbook.... or at least that is what I think it is called.

Good for letting a helpful little person get involved, and tastes yum according to all of the generations.

This one's coming out for you, Dear Sop!

185g butter
2 tablespoons golden syrup
1/4 cup SR flour
1/4 cup plain flour
1/2 cup natural muesli
1/2 cup brown sugar
1/2 cup finely chopped dried apricots (and I threw in some craisins too because my kids demanded it)
1/4 cup sultanas (from the natural aisle, without the sulphur because Nonna guilted me into it)
1/4 cup rolled oats
1/4 cup dessicated coconut
2 eggs, lightly beaten

Grease & line a baking tin - 20cm x 30cm

Combine butter & syrup in small pan; stir over low heat until the butter melts.

Combine dry ingredients.

Stir in eggs & cooled butter mixture.

Press mixture into prepared pan.

Bake in moderate oven for 25 minutes.

Cool in pan.

Cut into fingers.

Store: airtight container, up to 4 days.

And for the record: Sop is one of the nicest women I've met IRL. And I'm not just saying that because she makes really good custard slice, or because her husband is charming....:p

The beauty of the vanilla slice is that you get a fortnights recommended daily intake of dairy in one slice.

I have an excellent idea. You can make your meringue delights with the left over egg whites from the vanilla slice. It would such a shame to waste egg whites.

Do you have any idea how we got so overweight?

Sounds lovely - I'm always looking for good recipes.....for DD (ahem) of course (cough cough).

I hear that Vanilla Slice is very good too...I only wish I got to have more than one piece.

I've also had a lot of success with the zucchini and corn pasta (p.20 in the old version) DD will still happily eat it at 2 years of age.

ZUCCHINI AND CORN PASTA

20g butter
1 small tomato, chopped finely
1 small zucchini, grated coarsely
1/3 cup risoni
2 tablespoons creamed corn

Melt butter in small pan, cook tomato and zucchini, stirring, until vegetables are tender. Meanwhile, cook risoni in medium pan of boiling water, uncovered, until tender; drain. Combine warm risoni and vegetable mixture with corn in a small bowl.

Makes about 2 cups.
Freezes well.
Loved by husbands.

So, my only question is - who will be the first to attempt the Chicken Livers with Pumpkin?

Funny you should mention Chicken Livers. I have a couple of pate recipes that are screaming out to be made. I am just not a fan of touching offal. Stay tuned!!!

I just realised I have all those ingredients in my pantry MM! I know now how I will pass my copious spare time this afternoon.

I am a big fan of the natural sultanas...you can never go back once you've tried them.

Pate, Sop? Does that require another clothes party to accessorise?

I'll bring the meringues, and I am a BIG fan of pate.

But, no Nick will not be making the chicken liver dish for my 2 kids. Will wait for your feedback on that one.

Good luck with the taste testing, Periwinkle. Sop says that is how we all got fat in the first place.

Best go curl up with a Caramello egg I think.

I just made this and it's still quite warm but tastes great

A quick question, it was still a touch sloppy when I put it in the tray, is this normal or did I not let the butter/golden syrup mix cool enough?
