Mild Beef Curry
Ingredients - serves 6-8
900g stewing steak
40g plain flour
1.5 tsp salt
1 large onion, chopped
50g margarine
1 tbsp curry powder
1 tbsp paprika pepper
300ml water
1 beef bouillon cube, crumbled
2 dried red chilli pepper
1 tbsp mango chutney
1 tsp Worcestershire Sauce
450g can of pineapple cubes
2 bayleaves
Method
1. Trim any fat from the beef, cut the lean meat into neat 2cm cubes and toss in the flour and salt.
2. Place the onion in a saucepan with the margarine and fry gently for 5 mins or until soft. Stir in the curry powder and paprika pepper and fry for a further 5 mins.
3. Stir in the pieces of beef, increase the heat and fry quickly to seal the juices. Add to the pan all the remaining ingredients including the pineapple syrup and bring to the boil, stirring until blended.
4. Reduce the heat, cover with a lid and simmer very gently for about 2 hours or until the beef is really tender.
5. Alternatively, the curry may be turned into a heatproof casserole and cooked in the oven at 160C for 2 hours.

250g gravy beef / chuck steak
1/2 onion
1 or 2 cloves of garlic
thumb-sized piece of ginger
1 tbsp oil
400g can coconut milk
1tsp ground cumin
1tsp ground coriander
1/4 tsp ground turmeric
1/2 to 1 tsp ground chilli
Juice and zest of 1 lime
Handful of fresh coriander
Salt
Cut beef into smallish cubes and set aside.
Finely chop the onion, garlic and ginger and lime zest, and fry in the oil until softened.
Throw in the spices and a few tablespoons of the coconut milk.
Stir on high heat until the coconut milk evaporates and starts to sizzle.
Add the beef, a goodly dash of salt and the rest of the coconut milk. Leave to simmer on a low heat for about an hour.
Stir through the lime juice (not necessarily all of it - taste as you go) and the chopped coriander.
Serve immediately, with rice.

I have it with rice or mashed potato and with the leftover make toasted sandwiches.
