View Full Version : What do you do with your left over lamb roast?

We had a roast last night....I was just going to have it again tonight with a nice salad....but was thinking there might be something else I could do.
What do you normally do with your left over lamb roast?
Shepherds pie, pull meat off and process it, grated carrot/celery/zuch, leftover gravy and bit of stock.....it is super nice if there is leftover gravy!
But i also love cold lamb with salad and wait for it mash taters.....and its not a pg thing:no:
roast lamb rolls for lunch!! mmmm, i could munch one down right now...

Mmmmm shepherds pie - my Dad makes lovely ones!! Especially on a rainy day like today (at least it is here in Newcastle)

Mum does the shepards pie as well. Much nice with that meat than mince!!

wow, someone else likes this, all those round me think it is gross, but yummo, one of my faves!!!
I like to slice the meat quite thinly and layer it with the left over gravy (if there is any- if not make up some packet stuff) and put some breadcrumbs on the top. If you have roasted any onions, slice them up too and stick them in between the layers of meat. You gently heat that up until it is hot right through and crusty on top. Then you serve with either your leftover roast vegies, or just some boiled taters, brocolli etc. Would also be OK with a salad i reckon. I lurve leftover roast done this way!!!!:D

We just use it for sandwiches mainly, but sometimes i'll do fritters. You can use any meat really including corn meat, but i like topside/beef best.
1 3/4 cup SR flour
1/2 teaspoon salt (& pepper to taste too if you want)
2 eggs
1 cup milk
1 dess. spoon melted butter
1 1/2 cups meat of choice - chopped
2/3 cup tomato - chopped
2/3 cup onion - chopped
pepper
(You could add corn/peas etc. if you wanted as well)
Sift flour and salt/pepper. Mix together eggs, milk, and butter and add to flour mix. Add meat. tomato, and onion, and mix again.
Shallow fry until brown and cooked through (i normally chop one in half to check if the batters cooked).
They're yummy hot and cold! :thumbsup:
mmmm sandwiches here too, I love a roast lamb and tomato sauce sanga... :)
:chef: We do roast wraps...so yummy. Just get tortillas, heat up a bit of gravy, mash the veges onto the wrap a little, add lamb, slam down into a health grill and yummmoooooo!!!!!!:smiliedance:

We never have enough for something major. But we always have the leftover lamb chopped up, fried with any leftover vegies and then add eggs and milk for scrumptious scrambled eggs.

Since DP moved in there is never leftover meat that doesn't go in sandwiches - but I love meat fritters too. Maybe I will have to start getting bigger roasts!

Hehe, we are big meat eaters and buy a 2-2/5kgs roast when we get one :o, for that reason, leftovers :D. Alot fo the time DH takes the leftover to work with him (he camps out all week) for sangas and dinners.

I often make minature pies with left over roast.
Dice and fry off an onion
add a diced carrot
add shredded left over roast
mix in some herbs.........any kind will do
finally add a bit of stock and some red wine.
Simmer until meat is very tender.
Line a muffin tin with frozen ready made puff pastry, fill in the moulds and cover with pastry........brush with a beaten egg. Put in oven at around 180-190 until pastry has risen and golden brown.
Serve with sauce..........great for lunch, dinners or parties

Why not try this?...
ragu sauce (home made or bought)
zest of 2 oranges
chopped handful of flat leaf parsley
chopped clove of garlic
mix together and pour over cooked tagliatelle (or spag) , toss in left over lamb and add some grated parmesan
and voila yummy left over lamb pasta
Had this at a boozy party once and it was so scrummy I copied from the book (think J.Oliver)
Partners well with a good merlot (west australian of course ;) )

OMG just read the last 2 posts....I'm going to have to do another roast on the weekend so I have leftovers again....both those ideas sound yuuuuuummmmmy!!!
We cut our Lamb up into small strips & fry it in the wok & make Yiros... using homus or just a garlic aioli... with fresh tabouli & other salads :yes: :thumbsup: :chef:
We need a DROOL Symbol on here :laughing:
