Zuchinni bake

Zucchini Slice

ALL GRATED
Zucchini one big or two small
1 Onion
2 cups of cheese
1 carrot

Bacon (6 rashers diced or I use half a pakt of diced)
half a red capsicum
1 cup SR Flour
half cup of oil
5 beaten eggs
one teaspoon of beef stock
Salt and pepper to taste

Mix together. Put into 20x30cm greased dish. Cook for 40mins til brown...

4 Zucchini's grated
4 Carrots grated
1/2 cup grated cheese
1/2 cup olive oil
1 cup SR Flour
5 Eggs
1 Onion Diced
4 Bacon Rashes diced

Mix all together and cook on 180 deg for about 30mins or until lightly brown on top and a sqewer comes away clean.

Some people I know also add Chicken and or Tomato Sauce.

Mines not that exact but basically...

4 grated zucchini
1 handful grated cheese
small handful chopped sundried tomatoes or 2 chopped fresh tomatoes
1 handful chopped bacon/ham
small handful of corn kernals
1 chopped onion
6 beaten eggs
about half a cup of SR flour

Mix it all up, whack it in a square cake tin, sprinkle the top with some more grated cheese, cook it until it's brown on top.

My original recipe called for half a cup of oil, but one day I forgot to put it in and it didn't make a scrap of difference, so I've never put it in since.
