If your looking for an easy way out. I love Betty Crockers blueberry muffins. So easy to make, and they are the best I have ever tasted.

I'm sure you could use blueberries instead of the raspberries.
Raspberry muffins
90g butter
1/2 cup sugar
2 eggs
1 1/2 cups S.R. flour
1 cup full cream milk powder
1/2 cup water
3/4 cup frozen/fresh berries
Beat butter and sugar till light and creamy, beat eggs in one at a time. Fold in sifted flour and milk powder alternatively with water, mix to combine,gently stir in berries.
Spoon mixture into muffin pans. Bake in 200c oven for 20mins.

No I haven't actually tried it. It comes from an old school centenary book so I'm sure they'll be yum.
Yea I would just try and use milk instead, just add it until its muffin consistancy. Let me know how they work out.

I used the frozen summer berries mix from the supermarket.

This is delicious and my kids loved them. I doubled the recipe and because I was using frozen berries I used about 2/3 of the water. It made about 3 dozen, and was a great way to use up the milk powder left from white christmas!:thumbsup: Thanks Jazminesmum

I've been looking for a recipe for Blueberry Sour Cream muffins I have somewhere here for a couple of days. If I find it, I will post it. They come out like a moist mini blueberry sponge.

Found it! Mine are in the oven now.
60gm butter
3/4 cup caster or vanilla sugar
2 eggs
3/4 cup sour cream
1&1/4 cups Flour
1 tsp baking powder
1 tsp vanilla (omit is using vanilla sugar)
1 cup blueberries
Preheat oven to 230C and put muffin cases in tray.
Cream butter and sugar. Beat in eggs until well blended. Gradually add sour cream, vanilla if using, flour and baking powder. Fold in the blueberries and fill muffin cups.
Bake 15-20 minutes until golden and a skewer comes out clean. Stand for 10 minutes then remove from the tin. Dust with icing sugar if desired.
Makes 12.
These don't give a really high muffin, they rise to just above the top of the papers, and are flattish on top - that's quite normal for these.
