Just in case anyone has this weeks Take 5 magazine and is wondering whether the recipe for Creamy Chicken and Bacon Pasta is any good - it's GREAT :chef: so yummy, we had enough for everyone (family of five) to have seconds, even bubs loved it (minus capsicum of course :) )!

That is so funny! I was just looking for a chickeny- pasta type recipe and was just about to ask if anyone had any. LOL. I dont have the mag but do you think it will be on their website?

Ooh, sounds scrummy! Me and the girls are big pasta and chicken eaters, so it would be good to have another recipe to try! :yelclap:

Hi girls,

Sorry for the late reply, my connection died after i posted this one so i didn't come back to it until now.

Here is the recipe for you, and if you're looking for another creamy chicken recipe, i posted 'Chicken and Bacon in Seeded Mustard' a few days back if you want the recipe.

Creamy Chicken and Bacon Pasta

2 tblsp oil
500g chicken breast fillets, diced
250g shortcut bacon, diced
2 cloves garlic (i just put in 2 tspns garlic powder)
1/4 tsp cayenne pepper ( i didn't use this)
250g small mushrooms, sliced
1/2 green capsicum, thinly sliced (YUM!)
3 tsp cornflour
375ml can evaporated milk (i used skinny can of this)
375g fettucine

Heat oil in large frypan (my wok did all this) and add diced chicken, bacon,garlic and pepper and stir over heat until chicken is cooked. Remove mixture from heat and set aside.
Add the mushrooms and capsicum to the same frypan, stir until mushrooms are just softened.
Return the chicken and bacon mixture to the frypan,
Blend cornflour to a smooth paste with 1 tblsp water, add to frypan with evaporate dmilk, stirring constantly until mix boils and thickens slightly. Remove from heat and set aside.
Cook the fettuccine in a large pan of boiling water until al dente, then drain and return to the same pan.
Add chicken sauce mixture to the pan and toss gently over low heat until sauce coats fettuccine. Serve the pasta immediately.
