Welcome to Bubhub Bakeoff #13.

The theme for this bakeoff is

Light 'n Fruity

Your entry should be LOW CALORIE and have some fruit in it. You can make a dessert, main meal, finger food or even a drink, whatever you like. :D

Everyone is welcome to join in, the more the merrier.

HAPPY BAKING EVERYONE :party:

Entries close Thursday 1st March.

Mel & I will see if we'll b entering... I dont think so though because we go back to Uni next week and it gets busy working two jobs and doing Uni.

Girls...unfortunately I am announcing my retirement from the bubhub bake off competitions! (Well, for now anyway).

Uni is soooo hectic this year. Im doing heaps of night shifts in the delivery suites etc, so any entry I create will be cr*p as! :laughing:

Pineapple and coconut juice:chef:


Fresh pineapple (As much as you want really)
1 apple
lite coconut milk ( about 1/2 cup)

I juiced the pineapple and apple in my juicer and then added some lite coconut milk.Mix. Cool and serve with ice.

Here 'tis

Light-as-a-feather lemon, orange & mango cheesecake.

Recipe:
125g plain sweet biscuits, crushed
60g butter
250g light cream cheese
1/2 cup light sour cream
400g can 99% fat free skim condensed milk
3 tsp lemon juice
1/3 cup fresh orange juice & rind of whole orange
3 tsp gelatine dissolved in hot water, cooled
2 egg whites
1/2 a mango

1. Comine biscuit crumbs and butter, press into springform tin, refrigerate.
2. Beat cream cheese until smooth. Add sour cream, condensed milk, juice and rind, beat. Beat in gelatine.
3. Put mango in food processor & wizz until smooth, add to cheesecake mixture.
4. Beat egg whites until firm peaks form, fold into cheesecake mixture, pour over base, refrigerate until set.

(The recipe was on a tin of 99% nestle fat free skim condensed milk, but I added more orange rind and the mango for flavour.)

A bit just kind of 'fell off' when I was taking the photo :laughing: so I had to eat it. It's yummy!

I'm not sure yet? I'll have to think.:detective: I would love to make apple and rhubarb crumble. But I would be the only one here eating it. No-one in my family will eat cooked apple.

Maybe everyone will just surprise us in the last couple of days.

Fruit Salad Drink

a dollop of passionfruit on the bottom. watermelon chunks. sliced peach. pineapple pieces. tropical fuit juice poured over.

In separate bowl, beat 2 egg whites with 1/3 cup caster sugar until soft peaks form. Fold in 400g low-fat yoghurt (I used Dairy Farmers Traditional). Swirl through puree and divide into 4 dessert glasses.

Oh wow these look so good! I might just have to make these myself one day :yes:

I'm thinking I might have to re-enter as I haven't been too creative lately. I've been on a bit of a health kick and have just entered what we usually have on the menu. If I have some time I might do something else?

I used layers of;
~Tiny Meringues
~Raspberries
~Blueberries
~Strawberries
~Ricotta cheese mixed with orange juice

Should be very healthy (light) I assume and it is definantly fruity :D

Grilled fish with herbs and lemon juice served with a mango and spinach salad.
