Hi all,
As a little thankyou to everyone who posted on my potatoes recipe thread (my Dh will thank you too cause he won't be getting mash again! :laughing: ), i am passing over my fave recipe to you:
Chicken & Bacon in Seeded Mustard
(This is awfully rich and naughty, but SO divine :) And i can actually make it! haha They can be done in puff pastries too if voluavants aren't your thing.)
500gms chicken breast chunks
1 onion
4 full rashers of bacon
3 tbsps seeded mustard
600ml thickened cream
cornflour in a little water
splash white wine (optional)
4 large voluavants
Serves 4
Melt knob of butter and sautee onion. Add chicken and wine. Once chicken is cooked add 2-3 tbsps of seeded mustard and add chunky chopped bacon.
Cook for five mins and then add enough cream to just cover the food. Once cream starts to bubble, mix 1/4 cup cornflour into 1/2 cup water. Pour in. Mix together and season with salt n pepper.
Pour into voluavants and add freshly cooked vegies to the plate - i use yellow squash, carrot and
snowpeas. You should microwave the volauvants first, but i often burn them :( !
NOTE: No potatoes, as you may feel like you've swallowed a piano :( !
