If i serve up mashed potatoes for tea one more time this week i think my family may resort to eating the carpet instead!

The thing is, we all love potatoes but i am not very clever at experimenting in the kitchen. Any ideas? I was going to boil them up last night but that's awfully bland, is there something i could add (stuff them with?) to make them yummier ? please help!

I LOVE Scalloped Potatoes!! Mmmmm, I put a little diced bacon/onion in mine too.. Ohh YUM!! I think I know what Im having 4 tea :)

10 medium russet potatoes
1 can Cream of Chicken soup
4 cups shredded cheese (Colby Jack)
salt and pepper
garlic powder

Scrub potatoes and slice into circles.
Butter or spray a casserole dish with oil. Layer the potates at the bottom and pour over the chicken soup. Sprinkle with cheese. Bake at 350 degrees about 30 minutes, or until potatoes are fork tender and cheese is golden and bubbly.

If you're willing to make a 'naughty' recipe, this is always a hit!

Boil your potatoes in their jackets, when boiled (not mush!) cut a square in the top and hollow out a bit. Place in the hollow light sour cream, fried onions and bacon and top with shallots YUMMO!

i make scalloped potatoes too. or we have roast with herbs on them or boiled and i make a garlic bacon sauce to go ever them or a mustard sauce aswell:thumbsup:

It's only 10:15am but i am watering at the mouth already! They sound great thanks guys. One more question, what kind of herbs are popular sprinkled on them? With a bit of butter, or somethnig else? Sorry, TOTAL amatuer here (in other words, never come to eat at my place! haha)

Potato bake:

Layer sliced potatoes, chopped onion, diced bacon about 2-3 times, then pour cream over the top, cook for 1/2 an hour (or until knife/skewer goes in pretty easily), sprinkle with grated cheese, and cook for about another 1/2 hour on 180 degrees.

I make a large baking dish and use about 350gms of diced bacon, as much onion as you want (i buy the frozen chopped stuff, saves work! :D), and about 2/3 of a small carton long life cream (handy to keep in the cupboard).

You can also add sliced carrot and/or sweet potato, peas/beans, broccoli/cauliflower florets and sometimes i even chuck in some browned chopped sausages, so you've got basically a meal in one dish! Just alternate the layers!

We always use garlic and rosemary on our roast potatoes :thumbsup:

Excellent work girls, ta muchly. I plan on trying them ALL this fortnight :chef: ...make note to buy fire extinguisher too.. :) I have NO confidence in my cooking whatsoever, unless it's cakes!

a friend of mine made these really yum potato things, she piped them from a piping bag and cooked them in the oven. *droool* dunno what they are called or how to make them though:o

Potato cakes are nice too.
Cook your potatoes and mash with a fork. Add goodies such as bacon & onion, cheese, tuna, pesto, madras curry paste... whatever flavour you feel like having on that particular night. Mix in 1-2 eggs depending on the amount of potatoes you have cooked and shape a small handful into a ball and refridgerate 1/2 hour. You can drop straight into a deep fryer (once oil is hot of course! :D )or shallow fry in a pan, using your spatula to press down in a patty. You could also coat in flour, egg wash and breadcrumbs and shallow fry for a cripsy coating if you like.

They're called Duchess Potatoes and are just potato, egg and butter mashed together then piped onto baking paper on a tray and cooked till crisp and brown on outside. Easy!!

My step mum makes these potato cakes, she grates the potatoes and adds and egg and salt and pepper and cooks them in a frying pan with a little oil. They are quite nice.

Smashed Roast Potatoes...

Best to use baby potatoes for this, but it works just as well with normal sized potatoes.

Leave skin on potatoes, (so easier to buy washed potatoes)

Preheat oven to about 180 degrees

Place them in a saucepan and cover with water. Bring to the boil and then let simmer until the potatoes are soft.

Put potatoes in an oven tray and then 'smash' them with a potato masher or fork.

Drizzle oil over and then salt and rosemary, (or buy the Masterfoods Roast Vegetabe sprinkle from the spices area in the supermarket - thatis REALLY yummy)

Leave in oven until golden and crispy!

This one is really easy and so very yummy! And the best part - no peeling of potatoes!

In answer to your other question - good herbs/flavourings on potatoes are salt, rosemary. garlic and chives. (Not necessarily all together!)

A really quick & simple way is to chop up potato into small chunks then put them into a plastic bag then add a packet of French onion soup mix, shake it about then bake in the oven until cooked. We also add pumpkin & sweet potato :thumbsup:
