Okay, so, I dont like giving anna chicken nuggets, chicken fingers that you buy frozen in the shops as they are full of ****, so I decided to make my own.
I put a load of chicken breasts in the food processor, then added bread crumbs and mixed. Then I rolled them into balls and shallow fried them.
Thing is, the chicken came out really, whats the word, dense and heavy. (as it was completely just chicken).
Does anyone know what I could add to make the chicken 'fluffier' or lighter in my chicken nuggets???
Any ideas at all????

Hi Nash,
I just cut chicken breast into small bite-sized pieces, coat with egg and cover with 'Cornflake Crumbs'.
I used to shallow fry them but I now just spray in a little oil and put them in the oven to cook.
DS loves them. I think the store-bought ones are fluffy because they don't contain all chicken 'meat' iykwim. Jamie Oliver did a segment on them the other day and the store-bought ones had quite a bit of blended skin and offal in them:barf:

Instead of processing chicken breasts, just cut the breast into bite/nugget size pieces, coat in flour, egg mix and flour, egg, breadcrumbs and deep fry til golden brown.

I watched that!! That's what kicked my butt into gear!!:yes: :barf:
Okay, so im missing egg, a bit of flour and cut them into bigger pieces rather then processing.
Oh and at the risk of sounding like a dumbass, cornflake crumbs are just cornflakes crunched up yeah?:o

Hmmm, I know that Cornflakes have actually brought out a brand of Bread Crumbs that you can buy in a packet.
yep cornflake crumbs are in a packet with the breadcrums but yea u could make ure own just finely crush up cornlakes...make stuff taste HEAPS better:thumbsup:

Toss a couple of handfuls of bread into the food processor first to make breadcrumbs, then add these to the chicken mince. It makes them much lighter and fluffier. :yes:

Try this recipe...not exactly nuggets, but both my kids love them and they freeze well too :yes:
Chicken and Cheese Balls
500g chicken mince
200g grated cheese
1 egg, lightly beaten
1 cup breadcrumbs
3tbsp fresh parsley, chopped
Mix chicken mince, cheese, egg and parsley together in a bowl.
Mould mixture into small balls and coat with the breadcrumbs.
Cook in a little oil (preferably in a non-stick pan) for about 15mins or until golden.
*You could replace the parsley with 6 fresh basil leaves, finely chopped.
I found this recipe on a website ages ago...I can't remember where tho.

This is interesting, might try one of these recipes this week...
Just an added question, for freezing... do you cook before hand or freeze the raw product???
If you cook and then freeze, do you just thaw and bung em in the oven ...?

Cook first, then freeze :)
Then just reheat in the oven...or even the micro if you are really in a hurry. I have reheated the chicken and cheese balls in the micro then mixed them with some pasta and sauce (have used cheese sauce and tomato based sauces), and they were yummy :)
CWSmum, yummo, yummo, yummo. DH made a batch up today for DS and we have eaten nearly half of them.....they are so so good:thumbsup:
