View Full Version : quick, after work meal idea?

i can't cook as it is, let alone trying to attempt things around looking after two kids, my husband is the cook in the house, but he now has a more labouring job, so is very tired and hungry when he gets home.

has anyone got any quick, good meals we can whip up together in 10-20 mins when he gets home?

things we do now are, pasta bakes, quiches, stir fry's (packets), spaghetti. and other things along those lines.... but there are only so many times you can do the same things....

A fav of ours is spaghetti bolognese. My husband likes to cook and he works until 6pm and manages to cook this. just cook beef mince and add a jar of bolognese sauce. Then cook the spaghetti. It takes about 20 mins all up.

I have two girls (3 and 1) and I have just begun uni and my husband has just begun an apprenticeship, call it a quarter-life crisis. This leaves us little time to prepare healthy simple meals. Here are a few quick-ish meals that seem to keep them happy.

Lamb cutlets! The cook in 6 minutes (3 mins each side). I then quickly steam some carrots and brocolli and bonne apetit. Chiploata sausages also cook very fast.

On Sunday night, peel and chop various veggies for steaming during the week, then tuperware them in the fridge. It makes things much faster.

There's also the option of making a few dishes and freezing portions. Then you just take it out the night before and pop it in the fridge, then heat it when you get home. Good recipes are tuna muck (white sauce + peas + carrots + tuna), then you just cook some pasta (or rice), also buy a butter chicken sauce and add cooked chicken, pumpkin, peas, capsicum). Then just pop them into the freezer for meals that will atleast be something different from the typical pasta and stirfry.

Hope this is a bit helpful. I'm certainly not a great cook, but I have learnt to be a functional one.

Stuffed potatoes.
Green or red Thai chicken curry.
Oven baked chicken risotto (very quick compared to normal risottos)
Bok Choy parcels (they have carrot, capsicum, onion rice and cheese in them too)
Bacon & mushroom pasta in a creamy white wine sauce.
Cheesy crumbed chicken with salad or vegies
Tacos - buy a taco kit and these can be made in 5 minutes.

All are very easy and quick. If you want any recipes, just PM me.

pasta bake.

cook pasta. cook meat. cook vegies. throw in all together in a baking/casserole dish mix in the pasta bake sauce. sprinkle on top a bit of cheese. bake and serve!

As I've recently gone back to work 3 days a week and don't get home til 4 with the kids (5 y.o. dd and almost 3 y.o ds), these are the things I have planned for this week.

Chicken wraps - buy a roast chicken, some wraps, grated cheese, ranch salad dressing, cucumber and tomatoes, or lettuce, whatever. All you have to do is cut up the chicken and raw veg. My son will only have the chicken and cheese but my daughter eats about 3 of them!

chili con carne - fry a chopped onion til translucent, put in 500gms mince, fry til brown, drain, throw in 2 cans chopped tomatoes, 2 cans kidney beans (drained and rinsed), 1 can Big Red tomato soup and 1/3 can water, 1 tsp sugar, 1/2 tsp salt, a dash of cayenne pepper and 1 tsp chilli powder. bring to boil, simmer for 45 mins. serve over rice or toast with sour cream and grated cheese. Yumm. Makes enough to feed the 4 of us for 2 nights.

Any kind of soup served with tuna and cheese toasted sandwiches.

If all else fails, buy some Veggie Dogs (from near the lunch meat section). My kids love them and they're healthy, precooked, and just take warming in the microwave. With beans and potatoes, it's probably they're favourite meal! lol

We have a health grill which really helps coz you can just throw fish, sausages, kebab sticks etc straigh on and its fast to cook.

We just have huge yummy salads every night. Simple, fast and easy.

Sausages and mash at our house only take 20 minutes as I peel and cut the potato during the day (usually when Hayley is down for a nap) and leave the sausages out to defrost over night (if they aren't already) that way I only have to put the potatos in the microwave for 20 minutes and cook the sausages on the stove (takes about 10 minutes) sometimes I get Grant to cook the sausages on the BBQ which means less washing up and it also helps with me coz I am preganant and don't really like the smell of meat cooking. :barf:
