I'm looking for all of your ingenious methods of disguising vegies & dried fruits in baked goodies. You Know the stuff kids look at & can't wait to eat it cause it looks & tastes sooo good, It might be the looks or it might be the name that makes it sound good. What ever it is I'd love to know about it. I'm trying to feed up a 4 year old in particular but any recipes will do.
Heres my latest fav Carrot Cake recipe in which my DS hasn't found the sultanas

Carrot Cake
1 cup Oil
1&3/4 cups Brown sugar,
3 Eggs
3 cups grated carrot
1 cup chopped walnuts ( I roast mine in oven for 10 mins)
1/2 cup sultanas
2&1/2 cups SR Flour
1/2 tspn bicarb soda
2 tspns mixed spice

Beat oil sugar & eggs til thich n creamy
stir in carrot, nuts, sultanas, & dry sifted ingredients.
Pour into prepared tin & bake for 45 mins or til done. Cover with foil & bake for further 45 mins ( i missed that bit- whoops)
Frosting (I don't bother with this but here u are)
30g Butter
80g cream cheese
1 t grated lemon rind
1 T lemon juice
1&1/2 cups icing sugar

Beat together til light n fluffy.

So please get writing as I'm up for a challenge.:chef:

Pasties are good but my DS with still find mushroom & other things I try to hide in them.
jasminesmum the link to the first recipe in Bubhub didn't work but the other 2 did. The healthy fibre bars look fantastic. I'll make those next week for school.
Anyone else got any tried and tested favorites that are given the thumbs up by our smallest culinary critics?
I thought there may be a few more ingenious cooks out there:chef:

I have made pancake batter, then boiled up a big bunch of spinach/silverbeet, and pureed it with the batter, then cooked the "froggy pancakes" my kids love them.

Thanks jasminesmum for that link. Thats the sort of thing I'm after. I thought there would be more ideas on this one from the resourceful mums here, but maybe I was wrong!!!

Take any recipe for pikelets and grate vegetables into the batter. Good ones to try are zucchini (not noticable when cooked) or carrot. Carrot is really yummy with a bit of cinnamon or nutmeg too. I suppose you could even mix some cooked and mashed pumpkin into the batter (nutmeg or cinnamon would go well again).

Once cooked, leftover pikelets can be frozen - I use a bit of baking paper to separate them and freeze about 4 pikelets to a bag. These are quick to defrost (zap in the micro) for an easy healthy and on-the-go snack.

Exellent suggestion Martha, my kids looove pikelets but may get suspicious when they see different colours. However I will blindfold them first and then give them a taste. This never fails. (Except when They don't like the taste!!) Had only ever put spice in apple pikelets so will try your idea 4 sure.

When i make a bolognese i grate as many veges as i can find into it. Can't really see coz the sauce disguises it.

when i was a kid i went through a phase of not wanting vegies (i also disliek meat-still do) so mum had a war with dinner when it came to me.
she made me help cook dinner and i actually ate what i helped make coz i "made" it :laughing: we had stuff like spagghetti bolgnase,chow mein,stir frys, lasagne

I juice various veges (celery, carrot, lettuce, spinach, beetroot, parsley etc) with a mix of fruit (apples, oranges, ginger, pineapple, melons) and then freeze them into icypoles.

I bake cheesey muffins with grated vegies and/or canned corn kernels and diced capsicum.

howzabout dried fruit , any ideas there? Sultanas & apricots are the least liked in my house:rolleyes:
