Hi everyone,
One of the mums in my birth group asked me to post this, and I thought I'd stick it in the recipe section as our chat board is pretty busy as it is!:ecomcity:
It's low fat and reeeeally quick & easy to put together. It's my new "bring a plate" cos it's so easy to make.
This is one of those recipes to which you can add pretty much anything you fancy. If you use frozen veggies and don't thaw them (which I do), cook it for about 10mins longer. I add 4 rashers of bacon, cooked & chopped, about 3/4 cup frozen corn kernels, and a handful of chopped fresh parsley.
Broccoli Quiche in Potato Crust
4-6 servings 1 hour 15 min prep
1 (about 300g) package frozen chopped broccoli, thawed and squeezed dry
1 cup low-fat cheddar cheese, shredded
1 cup fat-free cottage cheese
1 cup egg whites (I use eggs)
1/4 cup onions, finely chopped
1/2 teaspoon Dijon mustard
1/8 teaspoon black pepper
2 medium potatoes, scrubbed
Combine all of the ingredients except for the potatoes in a large bowl, and stir to mix well. Set aside.
Coat a 9 inch deep-dish pie pan with cooking spray.
Slice the potatoes 1/4 inch thick, and arrange the slices over the bottom and sides of the pan to form a crust.
Pour the broccoli mixture over the crust.
Bake at 190 for about 45 minutes, or until the top is golden brown and a sharp knife inserted in the middle of the quiche comes out clean. Let sit for 5 minutes before serving.
