Hi Everyone,:wave:
Just wondering if you can give some suggeations what to do with ripe tomatos. I have a whole bag that are ripe and not really that good for salads or sandwiches.
I know that there is spagetti bol but any other recipes would be great. I dont want to justthrow them out.

I made some spag sauce and froze it. I must pureed the tomatoes with some fresh basil and rosemary then froze it. When I next made spag bol it was sooooo yummy, I'd almost say it was yummier after it had been frozen!
Chuck them in a pot with chopped up zucchini, onion, celery, some butter and some garlic and sautee until everything is soft. Serve over lamb or steak.
YUM!!!

You could make sundried or semi-dried tomatos (well oven-dried:p )
Cut the tomatos in half and season with salt, pepper and basil (dried is fine), garlic if you like, drizzle with olive oil and pop them into a really low oven for up to a day - depends on how dry you want them.
Then put into jars fill up with olive oil and seal.:chef:

They'd be fabbo in a curry! I cook up the spices in oil, add onion, brown the meat, then chuck in a ton of diced tomatoes and coconut milk and simmer, yummo!

You could add them to anything that you are doing for dinner really..
Cottage pie, savoury mince, pasta sauce (just add some basil or onion and serve over pasta), .. they are basically the same as tinned tomatoes - so whatever you use tinned ones in.. you can use over-ripe ones in.
