Ok I need some help - as i have a craving for chicken curry but have never made it before...
We dont have much in the cupboards at the moment due to having come back from holidays however i do have the following:
leftover roast chicken (basically whole thing)
frozen packet for carrot, brocli and cauli i want to get rid of
um rice
plus all curry pwd, flours, milk etc
help anyone??

A real chicken curry would take raw chicken to make - a cooked chicken probably wouldn't take on the flavour of the spices and wouldn't impart flavour into the sauce.
Anyhoo, to make a chicken curry, you'll:
300g chicken (preferably thigh meat - more flavour), cubed
1/4 onion
1 clove of garlic
same amount of grated ginger
1 tablespoon ghee/cooking oil
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon (or more!) chilli powder
1/3 teaspoon tumeric powder
one small tin of coconut cream or 2 tablespoons sour cream
a small handful of fresh coriander
1. Sweat off onion, garlic and ginger in the oil or ghee - add a small amount of salt at this stage so that they will impart their fluids and won't brown.
2. Add the chicken and cook on medium heat, stirring occasionally so that neither the meat nor the onions catch.
3. When chicken is nearly cooked, add the spices and stir. Allow to cook for a little while longer.
4. Add the coconut cream/sour cream, cook on high for a few minutes until the the cream is hot.
5. Toss in the fresh coriander and serve immediately with rice.
You can add vegetables (if desired) at stage 3.
Oh and it tastes pretty fantastic with some roasted cashews thrown in at stage 4.
If you use the cooked chicken, I would suggest you put the carcass in to bunk up the flavour a bit. Obviously, don't serve that bit! :D

That sounds really nice. Just one question what kind of vegies could you put in? I love my vegies. I have never made a curry before from scratch so I am a novice at this one.

Hi I love chicken curry and we have it once a week but my recipe is heaps different to the one above.
All i use is 500 grams chicken breast
1 onion
I bottle of cream
salt and pepper
curry power
I basically fry the onion and then the chicken till browned then i add the cream and curry powder and then let it simmer away for about ten minutes and serve on a bed of rice.
It just so yummy i could eat it everyday

The best vegies would be ones that hold their bite - beans are great, snowpeas and asparagus are pretty good too.
If you want other things like broccoli or leafy greens, I suggest serving them on the side as they would tend to dissolve in the curry and water it down.
