INGREDIENTS
* 125 g cream cheese
* ˝ cup sugar
* 1 egg
* 250 g Cadbury® Premium Dark Cooking Chocolate
* 600 ml thickened cream, lightly whipped
1. Beat the cream cheese, sugar and egg together until smooth.
2. Break the chocolate into small pieces and melt over a double boiler or in the microwave.
3. Add the melted chocolate to the cream cheese mixture and stir through until well combined. Stir in the cream, again stirring until well combined. Chill until required.
4. Pipe or spoon into glass bowls, chocolate cups or use as a filling for desserts.

125gm dark chocolate
4 eggs separated
1 cup cream
1 tablespoon brandy or liqueur (Kahlua, Frangelico)
Melt the choc and allow to cool slightly.
Add egg yolks to melted choc beating well between additions untul thick and glossy. Beat cream until soft peaks form, fold though chocolate mixture with brandy. In a seperate bowl beat egg whites till stiff then fold through choc mixture. spoon into serving glasses, makes 6-8. refrigerate over night
If you use chocolate with 70% cocoa solids or more, this mousse will have a low GI.

100g dark chocolate, broken into bits
1 egg, separated
1/2 cup thickened cream
2 tsps caster sugar
Melt chocolate in a bowl in micro in 30 second increments (or on stovetop over a saucepan of simmeriung water. When melted, remove from heat and quickly whisk in egg yolk and cream until combined andd smooth.
In a separate bowl, beat egg white until soft peaks appear (I usually use an electric mixer) then add sugar and beatuntil sugar is dissolved.
Fold egg white mixture into chocolate and pour into small glasses or bowls. I sometimes use wine or cocktail glasses for a fancy effect.
Refridgerate for at least three hours or overnight if you have the time. Sprinkle with a crushed up Cadbury Snowflake or chocolate crumbs.
You can also use white chocolate in this recipe for a bit of variety.

3 ingredient.........TOBLERONE MOUSSE!!!!!!! (serves 4)
200g toblerone, chopped coarsely
2 eggs, seperated
1/2 cup (125ml) thickened cream
melt most of the chocolate (leaving say 5 square bits)
fold in egg yolks (make sure chocolate is slightly cooled)
meanwhile beat the cream, and fold into chocolate mixture
beat the egg whites, and fold into mixture.
then spoon into 4 glasses adding chopped left over toblerone onto the tops.
refregerate for at least 3 hours, longer if possible
(huggggggge hit everytime i make it!!)
