View Full Version : Moist Banana and Blueberry Muffins

OMG I just made these muffins and they are soooo easy and sooo delicious, I had to share. I've had 3 already :o Not the healthiest with the sugar and butter, but great for an easy treat.

Mash 3 bananas in a large mixing bowl.
Add 3/4 cup sugar and 1 egg.
Add 3/4 cup melted butter and 1 cup blueberries.
Combine 1 1/2 cup SR flour, 1/2 tsp baking powder, 1/2 tsp baking powder and 1 tsp salt and gently stir into banana mixture.
Pour into muffin cups.
Bake at 200 degrees for 20 minutes.They are absolutely delicious.

Just a question, we don't have SR flour over here so I need to use plain flour and baking powder and a little salt as a substitute. Would I therefore omit the additional baking powder and salt?

Thanks heaps for posting such a simple and quick recipe! I didn't have blueberries, so just threw in some sultana's. I am sure will still taste nice! :smiliedance:

OMG!!! :p they are soooo good! so soft, moist, tasty and delish! DF & I are munching on them right now with a cuppa!! :smiliedance:

That is the best receipe i have ever cooked, i threw in a handful of choc chips too and wow they were amazing, thankyou for the receipe!:flowerz:

i wanted to try this however there were two 1/2 tsp baking powder is it only supposed to be one 1/2 tsp baking powder or is it supposed to be another ing.

So i tried this recipe yesterday and my muffins didn't come out moist. They were yummy but not moist. not sure what i did wrong.
