I've got a lge pack of bacon in the fridge that was on spesh at Coles this week. Anyone got any suggestions for some yummy dinner recipes with bacon?
chicken breasts or prawn wrapped in bacon, pan fried til brown then baked and covered in agarlic cream sauce *add drool here*

You can add bacon to heaps of different types of pasta sauces, tomato base sauces are really good..
Quiche
Potato Croquettes stuffed with chopped bacon & cheese
or Pasta with creamy white wine, mushroom & bacon sauce. Very very easy and tasty too.

If u hav some chicken cook it up with heaps and heaps of chopped up bacon, onion, garlic, cream, italian herbs, splash of white wine, sprinkle of chilli (if u like it spiced)...yummo...

Mmmm yumm!!! Thanks for all your ideas... still got plenty of bacon left over, so I'll be trying a few different recipes. Tonight I made a carbonara style sauce with bacon, onion, garlic, chives, sour cream. Roasted a stuffed chicken breast and sliced it up over some pasta with carbonara sauce.

Sure! It's very easy.
Just boil and mash a few potatoes (usually at least 1 large potato per person). Chop up one or two bacon rashers and cook for about 1 minute in the micro or until just crisp in pan.
Mix through potato with a pinch of salt & pepper and ? chopped spring onion or parsley (this is optional). Shape small balls or logs of potato mix and press a small cube of cheese into the centre and re-roll to cover. Coat in flour, then an egg wash (beaten egg with a splash of milk) and final stage to dip in bread crumbs, Shake off excess. They are best either cooked in a deep fryer or shallow fried in a bit of olive oil ensuring that you turn constantly until all sides are golden brown and crispy.
You can add anything you like to the mix so its very adaptable - things like mushrooms, spice the potato up with a bit of curry paste such as madras, add some herbs or chilli....list is endless!

Egg & bacon pies are yummy.
Put puff pastry into muffin tins
Mix eggs, chopped bacon, chives & anything else you like (ie chopped tomato, herbs etc) with a splash of milk or cream. Whisk.
Pour into pastry
Cook for 20 mins or so. :D
