I have three very very ripe bananas . i dont want to throw them out ...any ideas/recipes for something I can make with them ? Thanks

Banana Cake

125g butter, softened
1/2 cup caster sugar
2 eggs
2 large ripe bananas, mashed
1 1/2 cups self-raising flour
1 teaspoon bicarbonate of soda
1/4 cup milk
Icing: 1 1/2 cups icing sugar
30g butter
juice of 1 orange
orange rind to decorate

1. Cream butter and sugar until light and fluffy, beat in eggs
until combined. 2. Stir in banana. Stir in half the sifted dry
ingredients and combine. Add remaining flour and milk, stir
until smooth. 3. Pour mixture into greased 20c, round cake tin.
Bake at 180ºC (350ºF) for 30 minutes. 4. Stand for 5 minutes
before turning on to wire rack to cool. 5. To make icing beat
icing sugar with enough orange juice to make a firm mixture,
beat in butter. Spread over cake and decorate with orange rind.

Serve with cream and ice-cream for a tempting dessert.

I make this all the time - now that bananas have gone down in price Lucas shows absolutely no interest in them...when they were $10 kg he couldn't get enough of them!
Anyway - this is delicious & I add a handfule of chopped pecans & place a few pecans on top.

Banana banana bread
INGREDIENTS


2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
3/4 cup brown sugar
2 eggs, beaten
2 1/3 cups mashed overripe bananasDIRECTIONS


Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.It tastes great toasted, but then that could be me just looking for any excuse to add more butter! :o

The EASIEST banan bread ever!

2 cups od self raising flour
2 mashed bananas
1/2 cup raw sugar
1 egg lightly beaten
125ml orange juice (1/2 cup)
60ml (1/4 cup) veg oil.

Grease and loaf tin and line with paper, grease paper.
Sift flour into bowl add all other ingredients and mix well. Pour into tin, bake at 180 for 45 min, stand for 5 min in tin then turn onto wire rack to cool

This is delicious and soooo easy!:thumbsup:

I had a VERY VERY ripe banana and made banana choc chip muffins yesterday just use a basic muffin recipe. yummo

I just made this and it is yummo!!!:smiliedance:

I put them in the freezer and use them later on for baking banana bread etc
