I'll be watching this thread very closely as I'm bored with our dinner choices too.
I have some pretty yummy recipes that are really easy.
What sort of food do you like?
How about curries? They are easy .. though probably not much fun in this heat.
You can make different salads - chicken salad, seafood salad, cold meat salad ...
Ummm ...
Pasta bakes are quick and easy too.
You need to give me some boundaries here! I have masses of options running through my head but have no idea what sort of thing your looking for.
We do some of these:
- stirfries
- huge bolognese (grated carrot, zuchinnni, celery, mush etc.) then turn whats left into a lasagne the follwing night
- fancy salads (be creative, add pinenuts, roasted pumpkin, brocolli, avocado, grilled bacon, watercress, cashews, celery, capsicum etc.)
- Marinated lamb shanks are a winner with the boys
- Stews
- Prawn skewers on the bbq
- Baked fish (topped with tomato, garlic, herbs) in alfoil in oven
- fajitas
- tacos
- all the meat at lennards is gorgeous
hope this helps
Well we were in the same boat, so last weekend DP and I sat down and wrote down a meal plan here is some ideas....the reason I have put salad/chips is because DP WILL NOT eat salad so he has chips and I have salad...
Chow Mein
Lasagne and salad/chips
Chicken Curry with Rice (steamed/fried)
Burritos
Nachos
Chicken Parmigina(sp?) and salad/chips
Caesar Salad
Lamb Roast (okay its quite cold here today and its actually "roast" weather)
Quiche and salad/chips
Vegie Burgers with Salad/chips
Stuffed Potatoes
Okay hope that helps:thumbsup: Good luck:smiliedance:

Burritos are great. Just cook mince or chicken pieces with some kind of sauce (I use tandoori sauce for chicken). Then just put the meat in the burrito, along with cheese, salad and anything else you desire!
Tacos are great too. Especially tacos made with chicken mince instead of beef mince.:chef:

Here is a really easy chicken recipe. you just chuck it all into a baking dish and bake in the oven.
1kg chicken drumsticks
2 or 3 potatoed cut in wedges
2 cloves garlic, crushed,
1 onion cit into wedges
1x 400 gm tin crushed tomatoes
2 tablspoons sugar
1 teaspoon salt
pepper
2 tablespoons oregano
you just mix it all up ! it goes nice with rice or just add more potatoes and eat it on its own.
We love curries, stir fries, chicken rice, fried rice, fried noodles, home made burgers, fish or any type of seafood!
I make a dish which is pretty easy and yummy.
Dice up some chicken and marinate it in sweet chilli sauce and kecap manis (a sweet indonesian soy sauce - it's a bit thicker then normal soy sauce), or in normal soy sauce.
Dice up an onion
Cook onion and chicken - I like to cook until onion caramalises as I think it's yummy that way!
In the meantime boil som rice.
To rice add raw diced tomato and diced capsicum - then add the onion and marinated chicken once cooked.
This is really yummy, really easy and can be reheated the next day or eaten cold.
Have heaps more but need to go pick up DH from work so will get back on later
