I am looking for a marshmallow recipe as I have lost mine:crying: The one I am after does not use egg in it nor does it use cornflour and you don't heat it in a saucepan first. The recipe I am after you don't refrigerate either.

I know it had in it caster sugar, gelatine and vanilla essence but can't remember quantities or if anything else went with it.

If anyone has the recipe I am after that would be great!:thumbsup:

I have one in my Joy of Cooking. I can't vouch for it, I've never made it.

Put in the mixer bowl and let stand for 1 hour:
- 3tbsp gelatin
- half cup cold water

In about half an hour start to prepare a syrup. Place a heavy pan over low heat and stir until dissolved:
- 2 cups sugar
- 3/4 cup light corn syrup
- 1/2 cup water
- 1/4 tsp salt

When mixture starts to boil, cover it for about 3 minutes to allow any crystals which have formed to be washed down from the sides of the pan.
Continue to cook, uncovered and unstirred over high heat until the thermometer reaches 240 to 244 degrees.
Remove from heat and slowly pour over the gelatin, beating constantly. After all the syrup is added, continue to beat for about 15 minutes. When the mixture is thick but still warm add:
- 2 tbsp vanilla

Put the mixture into a 8 x 12 inch pan that has been lightly dusted with cornstarch. When it has dried for 12 hours remove it from the pan and cut it into squares with scissors dusted with cornstarch, and store the fully dusted pieces in a closed tin.

Thanks for recipe Martha if I can't find the recipe that I am looking for I may have to try that one;)

Edited to Add: Does anyone have the Day to Day Cookery Book that was issued in schools around 30 years ago I think it may be in that!

Here is the recipe I use for marshmallows.

Ingredients:

1 1/2 tablespoons of gelatine
1 cup water
1 1/2 cups caster sugar
1 teaspoon vanilla essence
red food colouring (optional)
1 cup toasted desiccated cocount


1. Grease and line a slice pan with baking paper. Combine gelatine and 1/2 cup cold water in heatproof jug. Stir with a fork to combine. Microwave, uncovered for 45 seconds on high power. Stir with a fork until mixture is clear. Set aside to cool.

2. Using an electric mixer, beat sugar and remaining water for 5 minutes or until white. Poor cooled gelatine mix into sugar mixture. Beat for further 10 minutes or until very thick. Add vanilla and enough food colouring to produce a pale pink colour. Beat for further 1 minute or until well combined. Spoon into pan. Smooth top. Set aside at room temperature for 3 hours or until set.

3. Cut marshmallows into squares. Roll squares in coconut.


Living in Qld I find I need to put the marshmallows in the fridge for them to be able to set.
