I just boil the potatoes whole skin on. When they're soft drain and let cool. When they're cool I peel them, chop in to cubes and chuck in a bowl with finely chopped red onion, bacon if I feel like it, and stir in some Kraft Coleslaw dressing.

I peel and boil and the potatoes. For the dressing i mix half part sour cream, half part mayonaise (i use the whole egg mayo) I kind of make it to taste. Sometimes i add more mayo, depends how you like it. Mix in some finely chopped onion (red or white).
Add salt and pepper and some chopped flat leaf parsley at the end.
Oh and sometimes i add boiled egg too. Yummmm

I chop an onion very finely Mix in Original craft mayonaise, then boil my potatos chopped up with the eggs to hard boil them, I cook the potatos till really soft. Then drain and put the potatos in with the onions and mix through, peel eggs add those chopped. Then cover immediately and the onions and mayo cook just a touch from the hot potatos.
I have to say, When ever we get invited to BBQ's everyone asks for me to bring this potato salad  and everyone always goes oh is that krystals potatos salad  It's the one thing I can cook perfect  Everything else is a mystery :)

 I don't know- just the way I learnt from my Mum.
If you leave the whole unpeeled potato to cool it's actually quite firm to peel but obviously soft to eat.

You've seen this before but I thought I'd post it again...
Babcia's Potato Salad
Potatoes - peel and cut into little bite size pieces. Boil until just tender.
Onion - finely diced. I would use 1 large onion to a potato salad.
Eggs - 2/3 hard boiled eggs. Roughly chopped into small pieces (removing shell first of course!)
Ham - 1 packet of the pre-packed shoulder ham is fine. Chopped into small pieces.
Mayonnaise - 1 large jar.
Baby dill cucumbers - this is what makes it (and I'm the sort of person who takes the pickle out of Macca's burgers!) I would use about 5/6 cucumbers to a large salad. Chopped into small pieces.
Salt & pepper to taste.
Parsley - chopped finely for garnish when serving.
Mix all of the ingredients in a large bowl until all combined.
Put in the fridge...the longer the better...enjoy! :chef:

My MIL makes a really yummy simple one!
Simply quarter the potatoes, boil, then when cooked, drain, toss thru full-fat sour cream and add some bacon and chives! Really easy and really yummy!
I think it would be nice with a bit of shredded cheese in too.

I have a couple I do, but my main 'thing' is the dressing. It's all in the mayo!!!
Homemade mayo - tin condensed milk (comes in 97% fat free too ;)), white or brown vinegar, salad herbs, salt & pepper to taste. Mix together and add vinegar to taste as required (so you just lose the condensed milk taste)
I use this mayo on most things - it's extra yummy with fish & chips (we have homemade as DP's family are very big on fishing). Our friends have called it "the remedy" LOL!
:chef: Version 1 - I boil the cut, peeled potatoes (I love it with skin, but DP doesn't...). Once boiled, tip off water, add some peas & corn (I usually add frozen as I'm slack - they defrost quickly though as the potato is still hot) and once cool add the 'remedy'.
:chef: Version 2 (the more creative one!) - I boil the diced, peeled potatoes (I love it with skin, but DP doesn't...). Once cooked, drain water, add a few tablespoons of fresh chopped mint and wait to cool. Once cool I add finely diced crispy bacon and red onion, and a couple of boiled, chopped eggs followed by my 'remedy'. Yummo!

I posted this before:
For me, a potato salad must be simple: potatoes (boiled and chopped to desired size), Heinz mayonnaise, white vinegar, salt, pepper and a little chopped parsley.
It's not much of a recipe really (I'm not one for weighing and measuring in the kitchen) as you basically make the dressing by adding the vinegar to the mayonnaise and then adding the rest of the ingredients to taste before mixing into the potatoes.
I know there are loads of variations on the theme (like adding pesto and suchlike) and though they are nice enough dishes in themselves, to me they just aren't a potato salad.

Mine is really easy.
Chop your potatoes into even sized pieces, then boil your potatoes until cooked through (but not mushy - Desiree potatoes are good for that)
Cook chopped bacon until crispy.
hard boil some eggs, then chop into quarters.
Throw it all together and stir in some mayo. (whole egg ones are good). Add some salt and cracked pepper to taste.
Yummy!
A variation is to add some english spinach to the bowl while the potatoes are still hot. Stir through unitl the spinach has slightly wilted and serve hot. :chef:

The one i made for EJs bday party was similar to Briannabear's but i also added some finely diced spring onion.
Heinz English Style Salad cream makes a good dressing for Potato salad also:)

Hi,
I use equal parts salad cream, sour cream and egg mayo, cooked bacon, and spring onions. I am always asked to bring it for family get togethers, which is a bummer as I don't even like potato salad . I have seen my niece (21) polish off 2/3 of a large salad bowl in one sitting, she loves the stuff that much!!

I almost fully cook 1 - 2 kg of baby chats
while there cooking in a frypan i cook (gotta love my measurements lol)
3-4 handfuls of diced bacon, 2 bunches shallots, 3 bunches chives, and about 3 -4 T italian herbs. I then throw the potatoes thru this and depending on how fat im feeling - i either add a combo of mayo and caesar salad dressing, but another time i chucked a carton of sour cream thru.
This potato salad you usually serve warm

*Baby potatoes - skin left on, quartered and boiled
*Bacon - chopped finely
*Parsley - chopped finely (or mint if you prefer)
*Chilli - chopped finely (optional)
*Chives - chopped finely
*Dressing made of equal parts Mayo and Sour Cream
*Salt and freshly ground pepper to taste
I cook the potatoes until just tender then strain, put back into pot and cover with cold water to stop the cooking process.
(I prefer my potato salad not to be mushy)
Combine all other ingredients in a bowl, add potatoes and toss.
I dont like normal potato salad dressing and not a huge fan of straight mayo - but I love the combination of mayo and sour cream.

Yum, Im going to cook some of the suggestions!
I always boil little chat potatos whole then quarter when cool. Grab half tub low fat sour cream, same amount of mayo and spreadable cream cheese, then add a bunch of mint and a diced leb cucumber. Mix this through the potatos then sprinkle with a good handful of toasted pine nuts.

I make mine without mayo.
Boil potatoes and put in fridge to chill, cut them up and toss in a bowl with some chopped chives or finely chopped red onion, a few tablespoons of capers and 4 tablespoons of olive oil and 2 tablespoons of whitewine vinegar, a dash of salt and a sprinkle of pepper. Leave in the fridge for the potatoes to soak up the juice.
You can add more vinegar if it's a stronger taste you are after, I always do.
Another variation is 100ml of olive oil and 3 tablespoons of balsamic vinegar.
