Hey Jamb

I don't know the one you are talking about - but I make a tuna and rice 'jamablaya' type dish.
I use boiled rice, cooked onion, tuna, chopped tomato, chopped capsicum, a generous amount of sweet chilli sauce and a bit of soy to taste if you want it. (Also really yummy to substitue tuna with chicken and marinate the diced chicken in the sweet chilli and soy for a bit before cooking it)
Really easy, healthy and YUM! And can served hot or cold.

Oh - and here it is.

It was posted by Roxy76 on the 'What's Your Favourite Meal to Cook' link, or something like that) I remember it because I really liked the sound of it too!

another simple lunch is boiled basmati rice mixed with small tin of olive oil tuna, lemon juice, steamed veges such as broccoli, red capsicum, mushroom & zucchini, dried onion flakes, lots of lemon pepper, dried garlic granules, , ground white pepper, thai seasoning if you want....it is the best!!

you can experiment with flavours, but have to have lemon pepper, the veges and olive oil tuna at least!!!

also nice with a sprinkling of finely grated parmesan...makes it like risotto...
