I made 1/2 spiced batch, one half plain. You can find Christmas cookie cutters at Kmart in the decorations section.

1 cup butter ( I used 1/2 butter, 1/2 marg)
1/2 cup sugar
1 cup icing sugar
1 egg
1 tsp vanilla
2 1/2 cups SR flour
1 1/2 tsp cinnamon (optional)
1 tsp ground ginger(optional)
1/2 tsp mixed spice (optional)
1/2 cup chopped glace cherries or other dried fruit (optional)

Mix butter and sugars until light and fluffy. Stir in egg and vanilla. Stir in flours, spices and cherries if using. Chill the dough for at least an hour.

Roll out, cut into shapes and bake for 7 minutes in a 180 degree oven. Leave for 10 minutes to harden a little, then transfer to a wire rack. Decorate once cooled.

They sound delicious, thank you. I am always looking for a new Christmas recipe to add to the roster! Do you think they'd work well as hanging decorations? (do they hold their shape/are they crumbly?) I just love hanging up edibles on the morning for people to snack on while they open presents! :xmas:

Thanks, CK. I bought some cute Christmas cookie cutters when the Chrissy stuff started coming out in the shops, but didn't have a good recipe to use them with. Now I do! :xmas:
