anyone like to share??? something relatively easy that i cant stuff up :D

Try This:
Ingredients:
Vanilla Buttercake
90g butter softened
1/2 Teaspoon of Vanilla Extract
1/2 Cup of castor sugar
2 Eggs
1 cup Self Raising flour
2 tablespoons Milk
Chocolate Icing
10g butter
1/3 cup milk
2 cups icing sugar
1/4 cup cocoa powder
Decoration
1 cup desicated coconut
1. Preheat over to 180 degrees or 160 degrees if it is a fanforced oven
2. Grease and line a lamington tray
3. Beat butter, vanilla extract, sugar, eggs, flour and milk in a mixing bowl with an electric mixer on a low speed until ingredients are just combined. Increase speed to medium and beat until mixture has changed to a paler colour.
4. Spread mixture into the lamington tray and smooth the surface.
5. Pop into the oven for about 30 mins or until springy to the touch
6. take out of oven and turn onto a wire rack to cool
7. When Cool, cut into squares.
8. Make chocolate icing by melting the butter in a heatproof bowl over a saucepan of simmering water. Stir in milk and sifted icing sugar and cocoa until the icing coats the back of a spoon.
9. Dip lamington squares into the icing mixture, drain off excess, toss squares in coconut and then place on a wire rack to set
I hope this helps, it makes really yummy lamingtons!

Just thought I would mention that if you are using a large lamington tray you might want to double the ingredients. I use this recipe with my half size tray and it makes about 12 lamingtons
