:wave: Everyone,
I have my daughters 13th birthday this weekend , she is having a cake that looks like a present, but doesn't want just a buttercake she wants a mud cake:rolleyes: ..I know that I would be able to find one on the net, but I would like a tried and tested one (tried one from the web the other day and it was a complete flop :o )..Does anyone have a great mud cake recipe that they can share with me...:fingerscrossed: someone can help.

I made this one a few weeks ago sooooooooo yummy :D
i use one very similar to zarasmum, only i use plaistow dark cooking choc, yummy yummy yummy.

This is the recipe i use.. it's very yummy :D
Mud cake
Serving size: Serves 10 or more
Cooking time: More than 1 hour
INGREDIENTS
28 squares (125g) good quality cooking chocolate
½ cup reduced fat margarine (Flora(r) light)
1 cup water
1 cup sugar
2 teaspoons instant coffee
2 egg whites
½ cup apple sauce (in jar)
½ teaspoon bi-carb soda
1 ½ cups plain flour
¼ cup cocoa
cooking spray
ICING
1 cup icing sugar
1 ½ teaspoons reduced fat margarine (Flora(r) light)
2 tablespoons cocoa
about 1 tablespoon skim milk
Preheat oven to 180°C fan forced.
METHOD
Place chocolate, margarine, sugar, coffee and water into a ceramic bowl. Microwave on medium-low for 2 minutes, stir ingredients then return to microwave for another minute. Stir until all ingredients are dissolved. Stir bi-carb soda into apple sauce (it will froth) then add to bowl. Add egg whites and mix well. Sift all the flour and cocoa into bowl then gently fold ingredients until combined. Pour mixture into a 19cm (8") round cake tin coated with cooking spray and bake 45- 50 minutes or until cake springs back when lightly pressed in centre. When cool make icing:
TO MAKE ICING: In a small bowl sieve cocoa and icing sugar, add margarine and milk and mix until a smooth icing is made. Spread over cake. Refrigerate.

I have a normal choc cake receipe which hubbie says is a like a mudcake. It's very easy and simple to make. Here is the receipe
CHOCOLATE CAKE (Mixes in 5 mins)
Ingredients
1 ¾ cups unsifted all purpose flour (plain flour)
2 cups sugar
¾ cups Hershey’s Cocoa
1 ½ tsp baking soda
1 ½ tsp baking powder
1 tsp salt
2 eggs
1 cup milk
½ cup vegetable oil
2 tsp vanilla essence
1 cup boiling water
Method
1. Combine dry ingredients in large mixing bowl
2. Add remaining ingredients except boiling water; beat at medium speed 2 mins
3. Remove from mixer; stir in boiling water (batter will be thin)
4. Pour into two greased & floured 9” or three 8” layer pans or one 13”x9” pan.
5. Bake at 170’C for 30-35 mins for layers 35-40mins for 13’x9’ pan.
6. Cool for 10 mins on rack
7. Remove from pan, cool completely & top with favourite frosting

25 mins prep, 40-45mins Baking+cooling
Serves 10-12 ppl
150g Dark Chocolate (i always use normal Dove chocolate, its not cooking chocolate, but works really well and is sooooo creamy)
8 tsp coffee & chicory essence
125g Unsalted Butter
1/2 cup Castor Sugar
1 cup Ground Almonds (almond meal)
1 Cup Fresh Brown Breadcrumbs ( I use a bought chocolate sponge cake)
4 Large Eggs, seperated
ICING
200g Dark Chocolate
1/2 Cup Sour Cream
Preheat oven 180, Grease & line base of a 23cm springform tin. In a small bowl, mix the choc, coffee & chicory essence.
In another bowl, beat the butter & sugar, until pale & creamy. Add almonds, breadcrumbs, yolks & chocolate mixture. Beat until combined.
Whisk white until stiff. Mix 2 tblsp whites into choc mix, to slacken it. Fold in remaining whites.
Spoon mixture into tin & bake for 40-45mins, or until firm. Turn out onto a wire cooling rack to cool & cover with a slightly damp, clean teatowel for 5 mins. Remove teatowel & allow to cool completely.
For icing, melt choc, remove from heat, whisk in sour cream.
While icing is still warm pour over cake & let set.
This is completely yummy..........
